Cuban Black Beans I

I used small black beans, and next time I'll use the regular, but this was fantastic and a great side to Jamaican Jerk chicken and Jamaican rice, and Jamaican Cabbage. Fathers day was a great success.

Jamaican Cabbage

I will put in more black pepper next time, and I also left the diced peppers in the cabbage. I added some butter as well. It went great with the jamaican rice and Jerk chicken, and Cuban black beans.

Guinness® Corned Beef

I did not care for this recipe. I did exactly as it said, and 3 hours later had to put the beef in a pot and boil it another hour. Not sure how they came up with the timing on this as in the oven I'd think it would probably need another 4 hours at least!!

Mushroom Sauce Baked Pork Chops

I have used this recipe numerous times for a variety of functions such as a friends' surprise birthday party. Next up will be for NYE 2009 in which I plan to set this recipe as the centerpiece for a burrito bar.

Carrot Souffle

I did as most and cut the sugar in half, added a dash of cinnamon, but I also cut the margarine--for me real butter--in half. AWESOME. Actually easy, and the entire dinner party raved over it.
