Creamy Chicken Asparagus Casserole

Reviewed: Nov. 5, 2002
Okay, sorry, this is not good. I love chicken, I love asparagus, almonds, tarragon, everything in the ingredients... but it had no flavor. I might has well have just boiled up some chicken and asparagus. If you like bland food (like something from a cafeteria or buffet) then go for it. I hate to be a meanie, but it just wasn't that yummy! How did it get these reviews? I put two cans of soup, added some milk- the consistency was nice. I added mushrooms as well and served it over rice. It needs something else though. Perhaps sour cream or melted cream cheese? Maybe some lemon juice? Something that compliments the tarragon, I don't know what. Maybe just needs more tarragon. Definitely needs salt and pepper.

Chipotle Chicken

Reviewed: Oct. 17, 2002
I definitely used too many peppers. I cooked for two and used the same amount of peppers the recipe called for with 4 servings because we both love spicy food. It was my first time cooking with chipotle peppers, and I had know idea jalapenos could be that spicy. Fire. I will definitely try this recipe again, but even as a spice-lover who asks for everything extra hot, I may use only half a can of peppers or less next time. Also, I used frozen corn instead of spinach. This gave it a sweetness that made the chipotle taste yum. I see corn more often in Mexican dishes, so it made it a little more authentic-looking. It was very pretty with the yellow corn, red peppers, and orangy sour cream sauce. Try this, but watch out for the heat factor!

Nigerian Peanut Soup

Reviewed: Oct. 3, 2002
This recipe is totally yummy as long as you like spicy food. Not to mention it's very easy and very quick. I make it all the time and I definitely suggest you try it. If the spice gets to you, add fewer jalapenos!

Cheesy Ham and Hash Brown Casserole

Reviewed: Dec. 25, 2010
Pretty good, rave reviews from the husband. Because there were no eggs in the recipe, I make it feel more breafasty. After 45 minutes in the oven, I removed the casserole and created nine craters with the back of a spoon and cracked eggs into the craters. Then I put it back in the oven for the rest of the time. The result is soft, runny eggs, so you might have to leave it in the oven a little longer if you try this to make sure the eggs are cooked enough.

Favorite Lentil Soup

Reviewed: Oct. 10, 2002
This was really good. I chopped up a few tomatoes and added them at the end. I also didn't use onion soup mix because I was too lazy to go to the store and get it. It was still great. I'll definitely make it again.

Brandy Cheese Dip

Reviewed: Feb. 20, 2002
This stuff was amazing! THE BEST! I made it as an appetizer for my boyfriend for Valentine's Day and paired it with French bread for dipping. He loved it so much- I think I've won his heart through his stomach. I actually used hickory smoked gouda cheese that you can get in a little wheel at almost every grocery store and added a little ground pepper. I was thinking about using this for a scalloped potatoes recipe as well. THANKS for this recipe!

Chili Cheese Dip III

Reviewed: Nov. 7, 2002
This recipe is easy and good, but I could literally feel myself getting fatter with every bite. Before it was finished, we had to cover it up so we couldn't see it.

Cottage Cheese Dumplings

Reviewed: Feb. 27, 2002
I'm sure this could turn out well, but I made this when I was first beginning to cook. I had big problems keeping the stuff inside. It tasted pretty good, but it was also really messy.

Feta Chicken

Reviewed: Aug. 28, 2001
This recipe is the bomb. I try all kinds of chicken recipes for my dad, and he said this was his most favorite. It's so easy but looks so elegant! For compamy, I have hummus and baba ganoush with pita bread for appetizers, Greek salad, and this recipe with greek-style potatoes and steamed asparagus for the main course!

Baba Ghanoush

Reviewed: Dec. 28, 2001
This was pretty darned good. It might have come out a bit watery, but the flavor was very nice. My friend who had never tried baba ganoush before and doesn't like many exotic foods couldn't quit munching on it. Definitely something I will make again.

Curried Cream of Any Veggie Soup

Reviewed: Aug. 24, 2001
This was quite good. I added cayenne pepper as well to satisfy my spicy appetite. Also, instead of curry paste I used powder- I'm from a small town and we can't get the paste here. I used about 1 1/2 tablespoons. Yummy!

I liked this stuff, but it's not good for a big crowd. I don't think too many people like garbanzo beans.

Best Cream of Potato Soup

Reviewed: Oct. 23, 2002
This is a great idea for making potato soup, smushing it up rather than having to dirty up the blender. I must have used gigantic potatoes (though I would've called them medium sized) because it was way too thick. Nothing a little more milk couldn't solve. But then it just didn't have enough flavor. I really like my food to have lots of taste, so next time I will dump spices and herbs in the pot rather than pinch or just use a teaspoon. It was great though, and I will use this recipe the next time I'm in the mood for potato soup. I would recommend doubling the recipe; it doesn't make a whole lot. Thanks!

Hungarian Mushroom Soup

This soup is excellent. It's very flavorful and anyone who likes mushrooms would like this. The dill and lemon with the sour cream give it a wonderful taste. I will make this over and over again. Yummy.

Cha Cha's White Chicken Chili

Reviewed: Oct. 17, 2002
This was such a great recipe. I added lots more peppers and it turned out wonderfully. Usually I have to add extra cayenne (it's out on the table with the salt and pepper at my house). This was great though. The flavor is amazing after sitting in the fridge and reheating! I added one can of black beans too because we like them a lot. Thanks for this recipe, I will make it over and over.
