Stuffed Chicken Breasts with Gouda and Spinach

This was okay. I don't like skin either, but I still tried it this way. It looked pretty, but it just wasn't that good. My dad and brother thought it was good, but not the best.

Baba Ghanoush

This was pretty darned good. It might have come out a bit watery, but the flavor was very nice. My friend who had never tried baba ganoush before and doesn't like many exotic foods couldn't quit munching on it. Definitely something I will make again.

Feta Chicken

This recipe is the bomb. I try all kinds of chicken recipes for my dad, and he said this was his most favorite. It's so easy but looks so elegant! For compamy, I have hummus and baba ganoush with pita bread for appetizers, Greek salad, and this recipe with greek-style potatoes and steamed asparagus for the main course!

Fettuccine with Sweet Pepper-Cayenne Sauce

Perfect recipe for anyone who works out a lot and needs those carbs. Also very healthy. I used the colored rotini since that's all I had around the house. I also used red and green peppers since that was in the fridge. It was very colorful and satisfied my appetite for spices as well with the cayenne pepper. And it was creamy without being too rich. Excellent.

Curried Cream of Any Veggie Soup

This was quite good. I added cayenne pepper as well to satisfy my spicy appetite. Also, instead of curry paste I used powder- I'm from a small town and we can't get the paste here. I used about 1 1/2 tablespoons. Yummy!

Carrot Rice

This was awesome. My dad loved it so much, which surprised me since he doesn't usually like anything out of the ordinary. It had a southeast Asian flair with the peanuts and cayenne pepper.
