I'm a grants manager for a nonprofit organization. My favorite thing to do is spend time with my husband, and I also love to cook.
My favorite things to cook
I like cooking a lot on the weekend and freezing/refrigerating it. I am way too busy and tired to cook on weeknights. I like to cook seasonally with vegetables from my CSA program and make up interesting dishes with the veggies I'm given.
My favorite family cooking traditions
For Christmas, instead of having a traditional meal, everyone brings lots of different finger foods. Some are traditional, but I like to always brings stuff with an international flare.
My cooking triumphs
I have triumphs (and failures) pretty regularly!
My cooking tragedies
I have had a lot of trouble cooking eggs in the past, but I think the key is a nice nonstick pan and lots of practice! I'm getting better...

Cheesy Ham and Hash Brown Casserole
Pretty good, rave reviews from the husband. Because there were no eggs in the recipe, I make it feel more breafasty. After 45 minutes in the oven, I removed the casserole and created nine craters with the back of a spoon and cracked eggs into the craters. Then I put it back in the oven for the rest of the time. The result is soft, runny eggs, so you might have to leave it in the oven a little longer if you try this to make sure the eggs are cooked enough.

Easy Pumpkin Muffins
Wow, how simple can you get?? I added white chocolate chips and walnut pieces. They're fab!

Cheesy Corn
A note from the submitter: it's not supposed to thicken up. If you go to any BBQ in Kansas City, this is what you'll get, served in a small cup. It is kind of like the soup.
