Awesome Roast Beef

very good recipe, I like to use the mushroom soup w/garlic, throw everything into a crockpot and forget about it, how much easier can it get!

Cranberry Pistachio Biscotti

This was my first attempt to make biscotti and they were GREAT. I didn't have a very good knife, you need a really sharp one to cut these to look pretty. But looks aside, they were delish!

Absolutely The Best Shrimp Scampi

These were definately not what I expected them to be. I followed the recipe and even went out and bought brandy for these - now I have to find something else to use it for. When I think of shrimp scampi I don't think of breading.

Key West Chicken

This was really good. I think I would have even liked it better if I would have marinaded the chicken over night, but I did use the small chicken tenders which really soaked in the flavor in the small amount of time I did marinate them. Definately a keeper. Worth a try!

Coconut Shrimp I

WOW! I have to say these are better then the shrimp I get at a very well known restaurant. I didn't change anything, maybe added a little less beer just because the batter looked to be a good consistancy. I made the batter ahead of time and put it in the fridge for about two hours, then put the batter covered shrimp in the freezer for about 1/2 hour. I did loose a little coconut when I deep fried them in the fryer but not enough to change the taste. DH said he didn't like coconut shrimp until he tasted these, I was kinda sad when he said he liked them because I wanted them all to myself :) Definately worth trying!

Awesome Sausage, Apple and Cranberry Stuffing

This was great! I did not use the turkey liver, and I also used chicken broth because I could not find turkey stock. I like cranberries so I added a bit more of those as well. I made this in the crockpot on low for about 3 hours and wow! This recipe will be used for years to come.

Peppermint Meringues

This is a great easy recipe! I made these for in baskets of goodies for christmas gifts, and I had to make a second batch because I can't stop eating them! I did add a few drops of peppermint extract as others suggested and a couple drops is all you need! I used a pastry bag with a star point and they are beautiful. The batch also doubled up very well. Also use parchment paper, they come off so easy.

Cinnamon-Roasted Almonds

These are AWESOME! They taste just as good as the ones you buy in the mall for a fraction of the cost. My daughter and I made these and gave them away in cute little jars for the Holidays, we didn't stop getting compliments for about two weeks! I did add about a tbsn of vanilla and also added an extra tbsn of cinnamon (maybe even more). These turned out so well this will definately be the Christmas gift people look forward to next year!

Cheesy Potato Soup II

I made this for my family and it was great for a quick dinner. I did change some things as others suggested, I used 4c chicken stalk instead of water, salted butter, no onions (DH doesn't do onions) I used a bit of onion powder instead (what he doesnt know won't hurt him right!), also some garlic powder, velveta instead of cheese slices and cooked up some bacon to put on top. It tasted very good - but I think if I would have follwed the recipe it would have been very bland. I will def make this again but I will keep my changes.

Thanksgiving Sweet Potatoes

I made this for my family for Thanksgiving and it was great. I didnt change the recipe at all. Everyone raved about how good it was, even my brother who seems to find any reason to make fun of my cooking! I have been told this is what I am to bring every year. Beware when putting in the broiler the marshmallows will catch fire very easily. But still excellent!!!!

BLT Dip

I made this for a New Years Eve party and let me tell you YUM! It is the most simple recipe (which who doesn't love an easy recipe) and it was so great. I can't believe I haven't heard of this before. I had to give the recipe out, and was a little hesitant because I didnt want to give it up. Anyway I am done raving - I did add some garlic powder to this because my DH doesnt do onions, and I added a little more sour cream. I can't wait to take this to my next party!

Chicken Cheese Ball

I made this for New Years Eve and wow!! This was so easy and I had everything on hand. I did cut this in half but kept the same amount of chicken. I also finely chopped the pecans in the food processor, which made it more presentable (it looked pretty). My mom said she is not a big fan of cheese balls - but she said this was delish! This is one I will keep around for upcoming parties!

Amish Meatloaf

This is a winner in my household. You know its good when my husband likes it better then his own mothers! I ommitted the bacon(just didnt have any, went light on the brown sugar, and put two slices of bread on the bottom of the loaf pan to suck up some of the grease - worked well. I think it helped with keeping the meatloaf together. Will make again maybe when his mother visits :)
