Cornbread Muffins II

This was a really good, easy recipe. I made a half recipe, making 12 muffins. I didn't have buttermilk, so I added a tablespoon of lemon juice to a cup of milk, and that worked just fine. I also added some frozen corn (maybe 3/4 cup), and that was a good addition. Mine were done after about 13 minutes, so be sure to keep an eye on them. I'm sure I'll use this recipe again!

Garlic Cheese Quick Bread

I made these in a muffin tin, and it worked really well. They were super quick and easy, and they tasted good. I used a blend of 4 cheeses and added a clove of minced garlic. I also substituted one cup of the flour with whole wheat flour. I served them with the Greek Pasta with Tomatoes and White Beans (one of my favorites!). These weren't my favorite thing EVER, but they were definitely good, and I will make them again for sure.

Chicken Piccata II

I noted the others' advice and ended up letting the chicken simmer in the sauce for only about 5 minutes after putting it in the oven awhile. It was an easy, healthy, good recipe. I served it with couscous and green beans, didn't pour the sauce over it, and it was very good. I'll definitely make it again.

Vegan Bean Taco Filling

Personally, I found it just a little too spicy. The flavor of the beans, pepper, and onion was so good, and I think the spices covered that up too much. I'll make it again, but cut back on the spices a bit.

Chocolate Covered Cherries II

My fondant wasn't sticky, it was simply gooey. I had to add a ton of flour and put it in the fridge to be able to work with it. Then, I found out that heating chocolate on "medium heat" is a bad idea. I ended up melting chocolate disks because I didn't want to waste my time trying again. Personally, I thought they were too sweet. However, both of my parents insist they taste like store-bought chocolate covered cherries, so I suppose that's a good thing.

Apple Scones

Though I don't know what scone dough is supposed to be like, mine seemed rather dry. However, after I took them out of the oven, the scones were still doughy inside. The flavor was good, but the texture wasn't scone-y enough for me.

Fabulous Homemade Bread

Ever since I found this recipe, I've stopped buying bread. Instead, I make this every week or two. It's great, and so much healthier than store-bought sandwich bread. Very good.

Quick Peanut Butter Cookies

I don't usually like peanut butter cookies, but these are awesome! The simplicity of the recipe makes it even better. I whipped up my first batch in roughly 25 minutes. I'll definitely make these again and again.

Exquisite Pizza Sauce

There is so much happening in each bite with this sauce! The peppers add a great kick, while the honey keeps it sweet. You'll be tempted to forget about the other toppings on your pizza, and just eat it with this sauce!
