Crustless Pumpkin Pie

I love this pie. This was the first pumpkin pie I made with my mom, and it turned out great! It is like a custard, which I like custards so this was perfect. By the way, we didn't use pumpkin, but we used another kind of squash since we were overseas at the time. But it still tasted like pumpkin!

Fluffy Pancakes

Excellent pancake recipe! I have been using the Truck Stop Buttermilk pancakes, which are also quite good. But these pancakes were perfect and easier! I used whole wheat flour instead of white, and I used 1 tb sugar. Next time I will go with 2 tb. But they were really great, and looked so perfect too.

Irish Soda Bread

I used half whole wheat and half unbleached white, since I don't eat all white anymore. I also used just 1 c. raisins. I made my own buttermilk using milk and vinegar and ended up with too much liquid, next time I will fix that. I had to add more flour because of that. I also cut back a little on the sugar and skipped the caraway seeds since I did not have any. I had a slice after it had cooled, but was still warm inside and it was very good. Chewy, so I'm not sure that is the way it is supposed to taste. I left it sliced up and uncovered overnight to take to work. It ended up drier this morning, so I don't think it is supposed to be left out like you can do with banana bread. I would definitely recommend eating it while it is still warm. Afterwards, I think it would be good with soup or something. But it may have just been because I messed up on the liquid/dry combination. Would recommend and would definitely make again. Very easy to make, like making drop biscuits.

Vegan Pancakes

These pancakes are ok, they are slightly chewy. I make them if I don't want to use or don't have eggs and milk on hand. Great if you are on a budget or don't have much on hand; you can still get your pancake fix. :)

Dairy-Free Crepe and Blintz Filling

Very good filling. I am not vegan, so I substituted reg. cream cheese & fat free organic milk. I added about 1 tsp. of brown sugar because the filling wasn't sweet enough. Next time I will try half white sugar and half brown sugar. I added sliced strawberries and blueberries on top of the filling and used the Dessert Crepes recipe to make dessert crepes (drizzled chocolate syrup on top). My family loved them; they especially like them with ice cream on top.

Fluffy Biscuits

Substituted butter for shortening. Made buttermilk using ~1 tsp. vinegar with milk. Excellent biscuits. A new family favorite to eat with my mom's breakfast gravy.

Chocolate Truffle Cookies

Best chocolate cookie I have had. Made if for an office potluck and won best side/dessert. Substituted 1 cup butterscotch chips (mixed in at end) that I needed to use up and I could not taste the butterscotch, although others could. Will definitely use chocolate chips next time, may try it with white chocolate chips. As someone else mentioned it is very good with milk as it is very rich.
