Enchiladas Suizas

I made this only with a few alterations. Used 1/2 cup of heavy cream instead of a whole cup, added two roasted fresh poblano peppers, and roasted bone-in chicken breasts in the oven with epazote and garlic salt. Those were the only changes. This recipe is fantastic! Better than I've had in any restaurant.

Mexican Chicken Corn Chowder

I used my own homemade chicken stock instead of bouillon, and roasted poblano peppers in place of the canned green chiles. Much better recipe this way, although I appreciate the launching point this recipe provided.

Poblano Chile Enchiladas a la Gringa

Great recipe! Added half a cup of chopped cilantro and half a teaspoon of salt to the poblano mixture in the blender, as it seemed a little bland without it, and used pepper jack cheese rather than mozzarella. Served with refried black beans and chips. Everyone loved it!

Pumpkin Cream Cheese Muffins

Fantastic recipe! I followed a few suggestions of other reviewers and used half white sugar half brown, and used a whole 15 ounce can of pumpkin. Really tasty!

This was truly the best! Instead of chopping a lot of vegetables, I used a can of veg-all. Everything else was made exactly as the recipe instructed. Amazing soup on a cold fall day!

Marbled Pumpkin Cheesecake

Great recipe - easy to make. I wanted to use up all the pumkin in the can, so I mixed that in with the swirl mixture with a little sour cream. Will definitely make this for family.

This was delicious! I too omitted the zucchini, adding black beans and some red and green bell pepper instead. The marinade was perfect and everything tasted great. I'll be making this many more times.
