Ratatouille Bake

Everyone loved it. We had to have it twice in one week. We added more ravioli than called for and did not add tomato sauce as suggested by others. However, I suspect it would also be good with the extra sauce. What a great and versatile recipe!

4 1/2 stars for a tasty change of pace to regular coleslaw. Loved the fruit, but you can never have enough coconut so add more. Give it a try!

Golden State Mushroom Soup

My family raved about this soup. I made 4 modifications - added 1/4 cup dry white wine, substituted a little half and half for part of the milk, added a bit of garlic, and used less than a cup of sour cream (because I didn't have it). It probably would have been just as good as written. Definitely a keeper.

Baked Potato Pizza

My family loved this, with my elderly mother declaring it was the best pizza she ever had. I'm using their ratings rather than my own since I'm not a potato person. I used thin crust pizza in a tube (11 oz) from the grocery refrig case which pressed into a jelly roll pan. As per other suggestions, I mixed the sour cream with spicy ranch dressing - a great modification!

Best Tuna Casserole

Yummy comfort food. I added a can of milk and forgot to add the peas so served them on the side. I used a 9X13 pan and definitely think that the can of milk just saved it from being too dry. If you like old fashion tuna casserole, this recipe won't disappoint as long as you add more moisture.

Slow Cooker Stuffing

I didn't follow the recipe exactly since I didn't measure the cups of bread and used far less butter. I did use about all the broth, but ended up with not enough sage - getting the right amount of sage is the art of the stuffing. The stuffing made using this recipe had the consistency of stuffing, not dressing which tends to be drier. I loved being able to free up the oven.

Buttery Corn Bread

This is an ok recipe if you are not looking for a good old fashioned cornbread recipe. This recipe tastes too breadyw, like it didn't have enough cornmeal. I didn't try reversing the proportions of cornmeal to flour (I made it according to recipe), but it sure tasted like I should have. Even Jiffy mix has more of a cornmeal taste! If you don't like old fashioned souther cornbread, this may be the recipe for you.

Quinoa and Black Beans

I've made this twice. The first time I served it as a side dish and then using the leftovers served it as a main meal adding a formed toasted small floor tortilla shell with the condiments for a taco salad (e.g., sour cream, salsa, tomatoe). I typically use fresh corn and per suggestions of others, I use only one can of black beans. Tomorrow, I'm bringing this as a side dish for a work party. I've found this recipe to be forgivable and adaptable - you can add any enhancements you want.

Pizza Sauce I

Tasty but - as another reviewe mentioned - this is more like a pasta sauce than a thicker pizza sauce. I added tomato paste to thicken, but it didn't help.

Beer Burgers

Slow Cooker Chicken Taco Soup

An easy, tasty, and modifable soup. I used all no or low salt ingredients with only a couple of substitutions. I substituted chicken broth for the beer (didn't want to use my last beer) and instead of tomato sauce and one of the cans of tomatoes with chilies, I used a 14.5oz can of diced tomatoes. This really filled the crockpot. I started it around lunchtime and it was ready by supper. Eveyone loved. Update: We make this several times a year. Tweak to your taste.

Harvest Pork Stew

This is an unusual and tasty stew. I haven't tasted anything quite like it. The recipe makes a lot of stew - consider halving. The timing of cooking the ingredients is off in the recipe. The challenge is to cook the ingredients so that they all become tender at the same time. Another reviewer suggested a good order. I tried my own but my timing was off since the butternut squash turned to mush. Maybe that was the intent of the recipe, because ut added creaminess, but i think it would be better as a distinct ingredient. Timing may be crucial to the perfect execution of this recipe.

Low Sugar Strawberry Rhubarb Crunch

A definite keeper with a couple of modifications. I substituted cooking splenda for the honey - 1-2 tablespoons. It came out tart, but not too tart. As others suggested, I used 2 tablespoons of cornstarch and 1/4 cup splenda brown sugar. The topping was a bit skimpy but that may have been because I used the one minute oats. Next time I will may double the topping.

Low Carb Cauliflower Leek Soup

This is an ok, easy recipe. I used chicken broth and fat free half and half. No doubt it would have been better with cream but the old arteries can't take it. Even though I mixed the soup with a hand mixer for a very long time and overcooked the vegetables the soup had a lot of texture and never truly became creamy. Maybe my mixing skills are lacking. To make the soup more enjoyable I added a dollop of sour cream and a sprinkling of feta cheese.

Green Bean Artichoke Casserole

This is a very rich recipe. I modified the recipe by reducing cheese and breadcrumbs and adding a bit of the liquid from the beans. However, it was still too rich.

Harvest Rice Dish

I'll add this recipe to my holiday collection. Although the recipe didn't specify onion size, I used 3 large onions and it worked out fine. The mushrooms and almonds were hardly noticeable (may add more when I try again), but I liked the orange zest and the cranberries were wonderful. I wouldn't substitute the cranberries - they and the onions made the dish. I finally found a way to enjoy brown rice!
