Butternut Squash, Apple, Onion Au Gratin

This was really good! I did make a few changes: I added more onion than called for, added some raisins, and used 1/2 cup broth like other people recommended.

Chicken Tinga Tostados

This was way to spicy. Would have been better with only half the can of peppers. We ate it with cheddar cheese, sour cream and lettuce. I also used only 2 onions and thought that was more than enough. If i had used less peppers this probably would have been 5 stars.

Thai Pineapple Chicken Curry

MAKE SURE YOU HAVE THE RIGHT FISH SAUCE!! The first time I made this, it was a disaster. I used very concentrated fish sauce and it smelled awful! The second time, was with A Taste of Thai fish sauce and it was amazing!!! I added extra pineapples because I really like the sweet zing they add to the dish

Roquefort Pear Salad

Bananas Foster II

This was really good but had a much different texture than the bananas foster I've had before. I think its because you normally are supposed to flambé them. Id rather not do that however because Id probably burn my house down.

Cajun Chicken

This is my go to recipe for fast and yummy chicken. Its also really good even if you don’t have lemon pepper or Italian spices on hand. I also use a lot less oil. Just brush some on the chicken lightly. If you don’t have Cajun seasoning, this site has some really great recipes for it which is great because you can control the level of spiciness.

Tiramisu II

This was amazing! I’m normally not a big fan of Tiramisu, but my mom loves it so I decided to make this for her and I’m glad I did! I tripled the coffee/rum mixture because I think that’s where the flavor of the cake really comes from. Also make sure to stir the egg mixture CONSTANTLY!!! while its cooking. If you stop stirring it will clump together and you’ll have sugary scrambled eggs. I stopped stirring for just a tiny moment and had to strain the lumps out.

Sauceless Garden Lasagna

This was so so good! I was really worried about having lots of extra liquid, but that didnt happen at all. I used about 2 cups of mozzarella cheese and 1 cup of feta. I seeded the tomatoes before I put them in which might be why I didnt have lots of excess liquid. Also, don't put the cheese on top of the lasagna right away, but wait until the last ten minutes. I let it bake for 35 min then added the top cheese layer and left it for 10 more min.
