Biscotti Toscani

These were kind of just ok for me. Didn't taste like the biscotti I know. But they looked pretty (I drizzled chocolate on them and put mini chocolate chips in the batter) and they were ok taste-wise. Very mild. Perhaps too mild for me. Needs a little more flavor. Perhaps some anise? I will make them again but will tinker with the recipe a bit.

Soft Chocolate Cookies

I made the cookie base as written then added shredded coconut, ghiradelli white chocolate chips and semi-sweet chocolate chips. Made a double batch for the holidays which made a lot of cookies but it was a good thing as these were really great cookies! The base of this is very good and very versatle. I am going to try to make them with various additions in the future but the coconut and chips were a great combo! Like a chewy brownie cookie!

Rainbow Cookies

I created my own issues while making these and even though they suffered as a result, I still found them to be delicious and authentic and I will definitely try to make them again the right way! These cookies are expensive in the Italian bakeries nearby and everyone in my house enjoys them (including my toddler) so to be able to make a big batch of them and have it taste the same is great! My problems arose out of doubling the recipe to fit into my sheet pans and then not portioning out evenly (I wound up with a very thin layer of red). I also didn't do the egg white separately because my hand mixer broke and I didn't feel like transferring all the dough in and out of my stand mixer having to keep washing the bowl to get it all completed plus some reviewers didn't bother with that step and it still worked well. Next time I will try it as written but I will make 2.5 times the recipe to fit my pans to make it easier to portion out and fit my pans. Still, with those issues I really liked the cookie and didn't find it to be too difficult or time consuming to make.

Absolute Best Pancake Syrup

I was skeptical especially while making this but I admit that I prefer it to artificial store bought syrup AND even real maple syrup flavor-wise. I will make this again especially for company. I allowed it to cool down until it was only just warm. I made my own buttermilk using milk and lemon juice since I didn't have any on hand and was already making some for the pancakes (fluffy pancakes - also a recipe from this site). Aside from that, I followed the recipe exactly.

Cake Balls

I tried to make these recently after I saw them on Bakerella's website. I intended to make them as "pops" as she had on her site. I bought strawberry cake mix, cream cheese frosting and chocolate for dipping. After mixing up the cake and frosting, I tasted it and found it to be disgusting. I couldn't imagine how it would be all finished - if the texture was still mush like the mixed crumbled cake and frosting was and then just coated with chocolate? So I didn't bother to finish them. Too sweet. Too artificial tasting. And, for the taste, not worth the effort. Instead, I scooped out balls of cheesecake (frozen variety, partially thawed) , froze them, rolled them in crushed graham cracker crumbs and dipped them in the melted chocolate. Stuck the popsicle stick in those and they were a hit. I wouldn't try to make the cake balls again.

Pumpkin Chocolate Chip Cookies III

While these pumpkin chocolate chip cookies aren't very mich like cookies in texture (or any others I've tried), they are still awesome! They are almost like pumpkin chocolate chip muffin tops - how can that be bad? My toddler also loved them. The only changes I made were due to what I had available in the house - I used cake flour (its all I had) and 1/3 cup brown sugar and 2/3 cup raw sugar (turbinado) and one tsp of cinnamon instead of two (as per reviews). I also forgot the milk and baking soda step and just added the baking soda right to the dry ingredients. With those errors/changes, it still came out delicious. I used a large cookie scoop so I had to bake them longer (about 14 min). Overall, good recipe and I will make them again and again.

One Bowl Chocolate Cake III

I actually got this recipe off of the hershey's unsweetened cocoa container and make it any time I need to make a chocolate cake. Its moist, rich, and very chocolatey. I've made it as a layer cake and cupcakes and have frozen them with good results.

Cream Cheese Frosting II

Delicious as is and also as a base to add other flavors to. I like that this recipe was not overly sweet like many others. I have added a little melted white chocolate and peppermint extract to frost "hot cocoa" cupcakes as well as coconut extract and a couple of tablespoons of coconut milk to frost a coconut cake.

Coconut-Cream Cheese Frosting

After trying it once, I made a few modifications to suit my own tastes. I prefer a less sweet frosting so I added a half bar more of cream cheese and a little less sugar (I eyed it and just put enough to get the consistency I was looking for to pipe them onto my cupcakes. But overall a good recipe. Everyone who I have given it to liked it. I just like mine less sweet and with a little more tanginess (hence the small changes).

Easy OREO Truffles

I've made these a few times and they are easy and delicious. Didn't and wouldn't change a thing. A lot of people have asked for the recipe. Very chocolatey and rich. PS: try replacing the oreos with NutterButters! Delicious!

Fluffy Pancakes

My new go to pancake recipe. I also made the good old fashioned pancakes from this site and they are good but I think these might be even better. Between the two, I just can't go back to box mix again. These are easy, I usually have all the ingredients and it tastes way better.

Zucchini Patties

These were good. I made them for a party so I quadrupled the recipe - 8 cups zucchini, 6 eggs, 1 cup onion, 1 cup flour, 1 cup seasoned breadcrumbs, 2 cups parmesan, 2 cups mozzarella, 2 tsp. kosher salt, pepper, fresh parsley and 4 cloves minced garlic as per suggestions by other reviewers. I made them on my electric griddle drizzled with a little olive oil to save time and excess oil. They came out great. I made them ahead of time and froze them. I plan to pop them in the oven to reheat and serve them with marinara.

Creamy Chocolate Frosting

I liked the texture and it was great for piping and decorating (I used it for cupcakes) however the taste was not that impressive and I have definitely had better chocolate frosting in terms of taste. I think that those who had trouble with consistency either had their butter too soft, didn't follow the recipe or didn't measure properly. The consistency is good. I even added more milk to make it even more creamy. I didn't have any problem with it being runny. I'll keep this recipe in my box however I will keep looking for my perfect chocolate frosting.

Quick and Almost-Professional Buttercream Icing

I made this to frost chocolate cupcakes today and it came out delicious. I don't usually like buttercream (too sweet for me) but this was really good. I will definitely make this again. The only thing I did differently was replaced the milk with half and half since I only had skim and didn't think it would be as good with the skim milk. The half and half worked nicely. I also doubled the recipe and it was just enough to frost about 24 cupcakes (however, I piped on the frosting so it used a little more than it usually would - I barely had enough that way). If you plan to frost and fill a cake, I recommend doubling the recipe as well.

Chicken Marsala

Easy and delicious meal. Served it with mashed potatoes and glazed carrots. I also doubled the sauce and made 5 pieces of chicken instead of 4 to accomodate company. I was concerned at first with cooking the chicken in the sauce (some recipes have you remove it first then add it back to the pan later) as I thought it would have made the flour coating come off easily (it did on one when I moved it). Luckily the remainder stayed on nicely and I was careful to remove them from the pan gently. We spooned the sauce onto the mashed potatoes it was so good. I would make this again. . Everyone liked it.

Cream of Wheat Griddlecakes

These were pretty good pancakes. A nice little change from ordinary pancakes. They definitely taste a little different from the regular (sweeter) and are worth making again. My husband and baby liked them too.

Quick and Easy Brownies

I was not a fan of these. I'm not sure if I did anything wrong but they were not very fudgy or chocolatey. And 1/2 tsp of salt was too much (I definitely tasted the salt). I made them two days ago and the pan is still sitting on my counter with only the two brownies my husband I tried that day missing. = (

Best Ever Caramel Apple Crisp

Four stars because it tastes good but I would make a few revisions next time. It was a little too mushy for me, the topping didn't have enough crunch and there was way too much caramel to drizzle on top of only an 8X8 pan of this. I had to save a good amount of it (not a problem since it would be great on ice-cream or for dipping apple slices). Next time I will try putting some of the caramel into the apple mixture, add walnuts, add more flour and lemon juice to the filling as other reviewers suggested and probably find another struesal recipe to top it with to see if its any better. Aside from the mushy gooey texture, it tasted pretty good though. Very sweet.
