Carrot Cake III

I omitted the pecans and used this recipe to make cake balls. OMG, they were amazing! The flavor was fantastic, and the cake itself (before being made into balls) was moist and delicious. Thanks!

Mississippi Tea Cakes

These were good, but they sort of reminded everyone of sugar cookies. I added shredded, sweetened coconut to one batch and subbed some of the vanilla for coconut extract, and those were very well received.

Slow Cooker Turkey Breast

This was super easy, but I didn't find that the flavor really got into the turkey. Also, I'm not sure whether my crockpot cooks really hot or something else was going on, because when I looked in on my turkey after four hours, it was done! Actually it was past done, since the top part was pretty dry. I'll try this again, but I'll probably cook it on low the whole time and start checking it around the three hour mark.

Potato Salmon Patties

These turned out really well! On the suggestion of another reviewer, I baked these in a muffin pan on 350 for 40-ish minutes, and they were fantastic. I also used left over mashed potatoes instead of flakes, and fresh dill since I had some on hand. Thanks for the recipe!

Stuffed Portobello Mushrooms

This recipe was wonderful! My dinner guests and I really enjoyed it! I made a few changes based on what I had at home: I cooked 4 slices of bacon, diced and set aside. I sauteed diced white onion in a little of the leftover bacon grease along with some fresh minced garlic. I subbed ground chicken breasts for the sausage, and added that to the onion/garlic mixture. When it had cooled a bit, I added the chicken/garlic/onion and the diced bacon to the cheeses, green onion, and tomatoes and used it to stuff 5 large portobello caps. I drizzled with the balsamic, sprinkled with cheese and baked as directed. It was AMAZING! Thanks so much for a great recipe!

This was okay... I gave it 4 stars because I think a large part of the okay-ness was our brand of teriyaki sauce, so I'm going to have to try this again with a different sauce.

Basil Chicken over Angel Hair

I liked this recipe, and my fiance thought it was out of this world! I used fresh garden basil, and home canned tomatoes, and I added in a few more seasonings to compensate, but other than that I followed the recipe to a T. This is NOT a recipe for people who like sauce-y pastas, fyi!

Lasagna Roll Ups

These are SO good! We're carnivores (and I can never get past the weird tofu texture!), so we subbed in lean ground turkey, and it was EXCELLENT! Great recipe, and a wonderful, quick alternative to traditional lasagna!

Cheese and Sausage Stuffed Zucchini

I tried this when we had a bunch of garden zucchini that needed to be used, and I have to say it was just okay for me. I liked the filling, but I really didn't think it meshed well with the zucchini. My fiance really liked it, though so I gave it 4 - half way between my 3 and his 5!

Bread Pudding with Whiskey Sauce III

This took WAY longer to cook than the instructions said, but it was well worth the wait! I used cognac instead of brandy since it was what we had on hand and it was amazing!

With the exception of omitting the celery (which I didn't have, and we don't like) I followed this recipe to a T and the result was less than favorable. It was edible... but VERY bland. We ended up adding a lot more seasonings to it, and it still was just okay. Sorry, but this won't be one I'll make again.

Chunky Tomato Potato Soup

This was great! I made it into more a vegetable soup by adding about a cup of fresh green beans, a can of corn, and 2 cups of diced onion. I omitted the celery, but added some celery salt for the flavor. My boyfriend finished most of it before he even thought about the fact that there was no meat! Thanks for a hearty, healthy meal!

Brown Sugar Meatloaf

OMG, this was SO good! Per another reviewer's suggestions, I only used 1/4 cup of brown sugar, and just 1 egg. Also, I added 1 tbsp of Worcestershire to the ketchup before putting it in the pan (on the bottom, which I think is genius, btw! Ketchup on the top bakes into a weird "skin" that I hated on my mom's meatloaf as a kid), and 2 cloves of minced garlic to the beef. This came out moist, flavorful, and absolutely perfect! I think I'll try adding some crushed red pepper flakes for a bit of a kick next time, but this will DEFINITELY be one of our dinner staples! Thanks!

Smothered Hamburger Steak

I'm not sure if I did something wrong with this, but it turned out pretty mediocre for us. The sauce was good, but the beef itself was totally bland and dry. I might try it again with a few changes, though since we really liked the sauce.
