Cottage Cheese Chicken Enchiladas

Extreme Banana Nut Bread 'EBNB'

I have made this countless times now. I follow the recipe exactly..except I make it in a bundt pan (just easier for me). I have, on occasion, added chocolate chips and that was good too. It's always delicious and my kids beg for it often. Thank you for sharing! This is "our" Banana Nut Bread from now on.

Tomato Pie II

Oh! This was really good! I used fresh basil and a mix of mozzarella and cheddar cheeses. I let the salted tomatoes drain, using paper towels and also dipped them into flour (lightly). After pre-baking the crust, I sprinkled a bit of Parmesan cheese onto it, then started layering. I also added a small, thinly sliced red onion. 1/2 mayo and 1/2 sour cream worked great for me. My crust was nice and crispy.

Jeff's Hot Dog Chili

Great. Exactly what I was looking for. This chili is perfect on hotdogs, cheese fries, whatever you like. I like to make a double batch when ground beef is on sale and freeze it.

Chunky Cheese Soup

This was really good. The only change I made was using Velveeta cheese instead of shredded cheddar. That's what I had on hand. The soup was very thick, creamy and the flavor was great. My 12 yr old daughter has already asked me to make this again. Win!

Italian Country Style Ribs

Very good. I browned the ribs well, then added them and the sauce to my crockpot. I used a little more sauce than called for and served it over whole wheat spaghetti.

Ravishing Red Velvet Cake

This was very good and pretty. I made it for my boyfriend's birthday. He loved it! I used a bundt cake pan. Had to cook a little longer that way. A couple of people said it could be a little moister. The taste was GREAT! I added chopped pecans to the icing! Otherwise I didn't change anything. Everyone raved over this caked, especially the icing!

Nacho Cheese Sauce

Thanks Mary Ann! This recipe worked GREAT for us. I followed it except we added about 1/2 cup Pepper Jack at the end with the chese slices. We used it for broccoli since that is the only way my daughters like it. Very simple, fast and I can't wait to try it with other foods...especially nachos. It thickened really well. The added cheese almost made it too thick, ALMOST! We'll be using this often. : )

Onion Rice

Great recipe. I used tomato/chicken flavored bouillion cubes. I used 2 instead of one to make it more flavorful. Used yellow onion and Med. grain rice. Just because these are the things I had on hand. It turned out great! Very flavorful. I used a generous amount of black pepper, freshly ground. Great plain, but we liked it even better served with sharp cheddar cheese sprinkeled on top! Thanks for a simple, inexpensive rice dish!

Baked Teriyaki Chicken

Awesome sauce! Just the right thickness and flavor...next time I'll use low sodium soy sauce...kids said it was a bit too salty..but they ate it ALL! Chicken was very tender. Loved using the boneless skinless thighs. I covered mine. Be careful not to overcook as ovens vary. Thanks Marian. This one will be a regular.

Navy Bean Stew

This is great! I was surprised how fresh it tastes. I made it exactly as written except I didn't bake it, just simmered on stovetop 45 min. after putting it all together. Awesome flavor. Beautiful colors too! We had leftovers which we didn't mind. On those I did do some variations. The first one just adding freshly ground black pepper and parmesan cheese. Yumm! Next time around I added some half and half, parmesan and black pepper. YUmmm! Even better. 5 Stars for the original in my opinion. Use your imagination to make it 6 or better. Thanks Margaret for an awesome additon to our winter faves!

Applesauce-Oat Muffins

Made these for my 9 yr old daughter for a quick breakfast. She loves them with a glass of milk and a banana. Great for grab and go healthy breakfast. I froze half of the batch. Added walnuts to half also. Yummy!

Different sidedish for those of us who love tomatoes. I added fresh cilantro, garlic and parmesan cheese. You could use any combo to change it up. Thanks for the recipe. We loved it and will be using it often. :)

Chicken Lo Mein

Excellent Flavor!! I used spaghetti instead of linguini because I wanted thinner noodles..it worked great for me. :)I used olive oil instead of sesame. (Didn't have any on hand). I also added some chopped zucchini just because I needed to use it up quickly. Otherwise I followed the recipe exactly...the sauce was flavored beautifully and thickened up just fine for me. Thanks so much. This is a keeper for us. Delicious!
