Cinnamon Mini-Muffins

This gave me a great base recipe. For those who are looking for more cinnamon flavor... add cinnamon baking chips. I also substituted buttermilk for skim milk and added 1 teaspoon of vanilla. They came out perfect. I brought them to work and EVERYONE commented on them. Thanks!

The Perfect Chocolate Chip Cookie

This is the exact texture of a cookie that I have been looking for! I love the idea of putting some almond extract in it. Since I used about 3/4 bag of Nestle Milk Chocolate Caramel chips and 1/3 bag of semi-sweet chips it gave it such a great mixture of flavor. I think the caramel goes great with the nutty almond flavor. This really is a wonderful cookie!

Chicken and Artichoke Pizza with Fresh Tomatoes

Amazing Whole Wheat Pizza Crust

I didn't split up the dough because I like a thick crust. Came out wonderful and very filling. Next time I will probably add some dried herbs in the dough for a little more flavor.

Sauceless Garden Lasagna

Thank you so much for a healthy guilt-free lasagna!! This was absolutely perfect and delicious. I cheated a little and use a thing layer of homemade marinara sauce instead of the tomatoes. I did add a layer of sliced fresh roma tomatoes on top though. I also used my favorite fat-free feta cheese and a reduced fat 4 cheese Italian blend in place of the mozzarella. For the vegetable mixture I followed the recipe exactly and it was wonderful. The flavors and texture was just incredible!

Cinnamon Apple Pancakes

These are the best pancakes I’ve ever had! I halved the recipe. I completely omitted the canola oil. I chopped up the apples very very very small and mixed them with about a half of cup of cinnamon apple sauce and added that into the batter. I also only used 2 egg whites and about a half of 1 yolk. They cooked so light and fluffy and I can’t believe how healthy and good tasting they were! I just topped mine with some warm apple sauce and sliced apples because I am not a fan of syrup. Thanks for this recipe!

Boiled Bagels

WOW! Maybe I just lucked out but my bagels came out just wonderful. They were exactly the type of bagel that I wanted. I used half whole wheat flour and made about 8 larger bagels. I let them rise 30 minutes and I did the broiling technique first before boiling them. I think I should have broiled them just a tad longer and they would have been slightly shinier. I baked them for about 25 minutes and turned them once while baking just because I wanted both sides a tad crispy. They were just perfect all around, and the middle was nice and fluffy. I made a nice big veggie bagel sandwich soon after they were out of the oven and I was just in heaven. I will be making these weekly!!!

Italian Zucchini Saute

I love this recipe. I used way less oil (about 1 tablespoon) because I wanted it to be lower in fat. I of course added some minced garlic as well as some green peppers and mushrooms. It is great healthy side to any meat or just with pasta/rice. I put mine over some tilapia I baked and it was wonderful.

Apple Chicken Stew

This was such a light tasting stew but yet very filling! All I had was apple juice and next time I think I would like to try the cider. I also just used small/thin boneless chicken breasts and threw them in whole and frozen. About two hours after cooking I took them out and cut them up and then put them back in. I let the entire stew cook for about 5 and a half hours and it was just perfect. The chicken was so moist and the flavors were so different. I also threw in half sweet potatoes instead of all white. I will make this again for sure!

Banana Oat Bars

Wow I am totally impressed with these!!!! I’ve been trying countless recipes for oatmeal type snacks that are healthy and this is by far the winner. I am a huge banana eater too so these are perfect! I added about ¼ cup non fat vanilla yogurt and half brown sugar like another review suggest. Extremely tasty!

Artichoke Hummus

Amazing. Added about 5 or 6 cherry tomatoes, a little dab of Italian seasoning, and instead of water I used a little of the juice from the can of garbonzo beans and some olive oil. I can't stop eating this!

Dee's Special Chicken

The beer in this recipe gave my chicken such great flavor. Like the reviews said before, don't brown the chicken just throw it in frozen! I cooked mine on low for 6 hours. Perfectly moist. Add two bottles of beer and a can of chicken broth. I also added small creamer potatoes chopped up and onion. For seasonings I used one package of Good Seasons Italian plus the garlic it said. So the basic idea of this chicken is great so I guess you just add what you like!

Applesauce Oatie Cookies

I made these cookies without nuts, chocolate chips, or rasins and they were so wonderful and simple. I didnt use nutmeg but added a good amount more of cinnamon. I used granny smith applesauce. So soft and a perfect sweet taste!
