Tiramisu Layer Cake
Made this for a family gathering and it was a hit, even with family members who love tiramisu and enjoy it at nice Italian restaurants. I chose this receipe because it does not require raw eggs. Also, ended up using rum but only because it was more affordable than the larger bottle of coffee flavored liqueur. The flavor was still very nice. Thank you for the recipe and all the reviews and suggestions. Will make it again sometime using the substitue marscarpone to see if it is much different.

Chocolate Eclair Dessert
Definately a favorite of friends and family. As several other reviewers said, this is even better made with french vanilla pudding. After trying another's recipe for a boiled homemade frosting and having it not turn out (I'm sure I did something wrong - as can't make fudge either) this is how I made the frosting: Melt 1 stick butter in a microwaveable bowl until just completely melted (not boiling) & wisk in 1/3 cup cocoa until smooth. Add 2 TBS milk & 1 tsp. vanilla, wisking until smooth. Sift in 1 cup of powdered sugar and wisk until smooth and creamy. It was very easy to spread. This dessert can be made up to 24 hours before serving; the longer refrigerated the better. Hope this helps someone else enjoy this dessert that I'm tempted to sit in front of the TV with and just enjoy right out of the pan :)

Addictive Sweet Potato Burritos
We really liked these. Was curious about the soy sauce and mustard, but they did add another layer of flavor. Halved the recipe, except for using 2 cans of black beans. When making the burritos used twice as much of the bean mixture as sweet potato & sprayed them with cooking spray before baking as another reviewer suggested. They were not bland at all and the right proportion of beans and potato. Our version made 7 medium sized burritos.
