This recipe is extremely similar in taste to a well-known German restaurant in the area owned and run by older German immigrants. To make this recipe more like the restaurant's, I boiled about 3.5 lbs. unpeeled red potatoes until tender. Drained them, rinsed in cold water, and added ice cubes to the colander to speed the cooling process. When cool, I sliced them (not thin). I doubled the dressing ingredients, but only used 2 tbsp. of sugar...my husband and I thought it still tasted too sweet, so next time I will try just 1 tbsp. (even with doubling the dressing ingredients.) I also didn't add parsley. We had enough for two meals, and the potatoes tasted just as good the next night re-heated in the microwave.
