Au Gratin Potatoes

I want to note that I rated this the way I made it, NOT how the recipe instructs! I wanted to make a low-fat version of this, so here's what I did: Hash browns, cream of potato soup, 98% fat free cream of chicken soup, 8oz light sour cream, diced onion, shredded cheddar made with 2% and then splashed some milk and fat free butter on top (the only thing I omitted was the green peppers and I'm glad I did). It turned out as good as a low-fat version of the recipe could be! I want to make it again, but next time add a little kosher salt, a dash of pepper and maybe a little more onion. I'll also bake it for longer because the hash browns were cooked, but could have been a little more done (but that, I'm sure, has everything to do with the fact that my ingredients had less in them). Overall, great recipe to change up and into something a little lighter!

Pesto Chicken Florentine

This was good! My husband liked it. I made this just last week and to tell the truth, I don't even really remember the way it tasted, so it couldn't have been anything amazing, but it's easy and versatile. A pretty good pasta recipe.

Too Much Chocolate Cake

YUM. I did change one thing though: instead of using chocolate chips, use chocolate CHUNKS. It creates these big gooey eyes-roll-back-in-your-head bites. This is a really easy yummy cake-PERFECT for when you don't have alot of time and want to serve something just loaded in chocolate!!

Baked French Toast

This was really yummy tasting, but it was too soggy for me even after following others suggestions (used less milk and cream). We had lots of leftovers and reheated them the next morning in the oven at 350 for about 15 minutes and they were PERFECT! Not siggy and nice and crunchy on the outside! We were fighting over the last piece!

Carrot Cake III

My Dad's favorite cake is carrot cake, so I came across this recipe and made it for him. He liked it alot and my mom LOVED it. She wanted the recipe. I didn't taste it (I hate carrot cake) but they loved it!

Slow Cooker Beef Stroganoff I

I'll make this again, but make these changes: More beef. At LEAST double the sauce mix. Cook on Low for 8 hours and watch it closely (mine burned on Low for 10 hours) Add: Pepper Beef broth, Minced garlic. Sour cream instead of cream cheese. It had a good taste, but there's not enough, which is why I'm pretty sure it burned.....

Baked Teriyaki Chicken

My husband is a HUGE fan of teriyaki, so to impress him was going to be a real challenge.....until I found this recipe. Ever since I've made this teriyaki, he tells everyone he'd eat mushrooms if they were dipped in this sauce (he HATES mushrooms). I probably make this at least 6 ot 7 times a month-it's a true "regular" in our home. I just throw all ingredients into a pot, boil until it thickens, pour all of it over chicken breasts, then bake COVERED at 375 for 30 minutes. I then cut up the chicken and serve over a bed of rice pilaf-don't forget to save the juices! My husband's favorite thing is the extra sauce for dip :)

BBQ Pork for Sandwiches

DELICIOUS. I slow cooked the pork on low for 10 hours, like I read that someone else did, and it was so tender that I couldn't pick it up out of the pot without the help of a spoon! My husband LOVED it. After I took out the larger clumps of fat (highly recommend doing) and shredded the pork, I spooned a little of the pot's beef broth juices over the pork to make it real juicy (careful not to make it too juicy though!) For the BBQ, I mixed some Corky's Smokin Hot BBQ sauce into some KC Masterpiece Original BBQ sauce. The Corky's sauce added a little bite to it-it turned out perfect! Served on a whole wheat bun with baked beans and cole slaw-what an easy and delicious meal! My husband and I now want to invite people over for a BBQ with this recipe! FANTASTIC.

Chicken Spaghetti Casserole I

It was good, but I wasn't dazzeled by thie recipe considering all the adjustment needed. I added 2 cans of cream of chicken, like others suggested, along with garlic powder and more pepper. It still wasn't amazing or anything. I've had much better chicken casseroles. My husband liked it, but onyl after I added garlic powder. Before I did that it was very "blah". I'd add more green peppers next time and something else, maybe cooked broccoli or another veggie too add something to this. It was pretty much just chicken in spaghetti with cream of chicken. I was surprised there were so many rave reviews. It wasn't bad, if I need an easy chicken meal I'd probably make it again, but I definitely wouldn't give this 5 stars.

Jamie's Cranberry Spinach Salad

It was good, but didn't live up to my expectations. After reading all these reviews I was expecting an incredible masterpiece! My husband wasn't a very big fan of it..... I added blue cheese crumbles and I think that was the salad's saving grace-I'd highly recommend adding them. I also added the mandarin oranges, but my husband hated that part. He said it tasted like it wasn't suppposed to be in it. I might make it again (but not for my husband!) but I'm going to keep looking for better salads.... I'd recommend the Roquefort Pear Salad before this, for sure.

Terrific Turkey Meat Loaf

My husband and I loved this loaf! For a TURKEY meatloaf it was wonderful! I left out the green peppers and olives (that just didn't sound good to me) and instead of oat bran I used bread crumbs that I already had with some italian seasoning mixed into it (aka Italian breadcrumbs ;) I also spooned some ketsup ontop of the loaf-I thought it'd get too dried out being uncovered and all.... My husband has requested this a few times already! Definitely a keeper ;)

Catherine's Spicy Chicken Soup

I LOVED this recipe! I've been trying to eat meals with low to no fat and came across this one. I love spicy food so this was right up my alley. I substituted the tomatoes for a can of Rotel diced tomatoes with green chiles like Lucky0372 did and black beans for the chili beans. PERFECT. Another thing, I just boiled the chicken for about 20 minutes, took all but 2 quarts water from the pot, then threw everything in and simmered for an hour. It was PERFECT. Very spicy! My husband and I sat on the couch eating the soup with a box of tissues in between us for our runny noses from the spice-lol! I've made this 4 times already and have only had the recipe for a few weeks. For me to make a meal more than once over that time is very rare, so it HAS to be good. I'll be serving this soup to my grandchildren! (Well, I may have to cut down on the spice for them-but I'm keeping it as is for me!

Gordo's Good Venison

I would rate this with maybe 4 stars, but gave it 3 because my husband didn't like it at all. He actually made a sandwich for dinner instead of finishing it. I think it'd be a better marinade for chicken rather than venison.

Roquefort Pear Salad

This a fantastic recipe. I don't think I've ever rated anything a five star yet, so for me to do that says alot about my opinion of this salad! It's been a while since I've made it and just this evening I asked my husband what he wanted for dinner and he said, That pear salad!" Neither of us are very "big on salads", so for us to have this for DINNER is really saying something.

Best Green Bean Casserole

WHAT'S THE BIG DEAL?? People posted 5 stars and raved about this recipe and I'm going, "Huh?" I just needed a very simple, quick and easy green bean dish so I went with this. It was, well, green beans. I wouldn't call this a "recipe" though.

Sweet Potato Pie II

I liked this recipe, it was very good. I didn't make it into a pie though, I doubled the recipe, spooned it into a casserole dish, put a layer of pecans over it, then marshmellows and it turned out awesome.

Strawberry-Sauced Crunchy Fruit Salad

Huh? I do NOT see/taste why everyone gave this 5 stars. Sure, it was a pretty good fruit salad, but 5 stars? No. I made this for a brunch and, bottom line, it just tastes like chopped up fruit mixed with that stawberry topping for ice cream (with a bit of a citrus taste because of the orange juice) with some cereal mixed in it. If I were to make it again, I'd just cut the time in half and chop the fruit up, mix it with that ready-made strawberry topping and then a cup of the cereal "Honey Bunches of Oats". To be honest, it'd taste just the same....

Honey Mustard Sauce

This is good, but I personally wouldn't jump up and down about it. I'd make this again for a picnic or an easy everyday meal but if I were looking for a sauce for a special occasion/meal, I'd keep looking.

Chicken Enchiladas V

Really good enchiladas! I kept tasting the chicken mixture because I knew there was something missing: I recommend adding CUMIN-it makes a huge difference. Also, to reduce the amount of fat just a little, I bought 98% fat free cream of chicken and mixed it with enchilada sauce instead of sour cream. It turned out soooo good! I will definitely make these again!

The Best Meatballs

These are the first meatballs I've ever made and they turned out good. I read the reviews first and cut down on the water, which I'm glad I did (I used about half the recommended amount). I usually like to follow recipes to the letter but I didn't have stale Italian bread or Italian flat leaf parsley so I used Italian breadcrumbs and dried parsley. They still turned out good! The only thing I'm going to do differently next time is give them some SPICE (there was no spice to them!)
