About this Cook
If other people think the flavor of a dish is too intense or aromatic, then I'll probably really like it. Lately, I get the most satisfaction by working with the ingredients I have on hand to make something work.
My favorite things to cook
Carolina style barbecue (pork with vinegar and texas pete). Thai green curry.
My favorite family cooking traditions
I miss the days of rice-a-roni stroganoff. Though they retired it a few years ago, it was a staple in my childhood and later, during my starving student years.
My cooking triumphs
Would you believe that it took 4 lbs of heirloom tomatoes from my front yard to produce two big servings of out-of-this-world, simple tomato pasta sauce? Balancing fresh basil, garlic, shallots, lemon and sugar was key to my success.

Green and Red Tomato and Corn Soup
Fresh & tasty soup! Added black beans and a bit of cayenne pepper & worcestershire to make it a bit heartier and more zesty. Will definitely make this again with next fall's green tomatoes!

Capicola Canapes
We made these for a New Years party. They were a big hit with the party goers and super easy to make. We used mascarpone cheese instead since we had it in the fridge but I'm sure it would be great with cream cheese.

Thai Ground Chicken Basil
I subbed 2 TB diced jalapenos for the thai chiles and added a tsp of thai chile paste. Only had a little fresh basil around, so I supplemented that with cilantro. Turned out great (3* HOT) and served on a bed of cabbage, it tasted like "larb gai."
