Tofu Turkey I

I loved this recipe and even some meat eaters liked it! I did tweak it a little bit only because I didn't have some ingredients (miso paste or orange zest and used soy sauce instead of tamari). I also pressed my tofu for 36 hours. One ingredient I added to the baste was a tsp of liquid smoke. I will make this every year, this was my first vegetarian thanksgiving! From reading the other reviews i cooked it for 1 hour at 350 with foil then 1.5hrs at 375 without foil. I was even able to mold it into a turkey with drumsticks on the side!

Horseradish Deviled Eggs

I loved this recipe but for everyone else it was hit or miss. One person suggested I cut the horseradish in half, another person said it ruined the recipe all together! Make sure your crowd likes horseradish before you serve these. I do, and I loved them.

Dill Potato Salad

I really like this potato salad and make it for lots of summer cookouts. The only thing I change is that I do 1/2 sour cream and 1/2 Hellman's Canola mayo. This mayo has a tangy taste that I love and adds some zip without the greasy taste of regular mayo. Another time i added some chopped sweet yellow onion and it was tasty.

Picnic Potato Salad with No Mayonnaise

This was a very good alternative to traditional potato salad. I love blue cheese so it was a no brainer for me. I followed the recipe as is and really enjoyed the flavors.

Clinton's Special Vegetarian Quiche

This was very delicious. The only part that I did not enjoy was the puff pastry as the crust, but that might just be my preference. Next time I will try pie crust or crescent rolls.

Vegetarian Gravy

This gravy was beyond excellent! The closest to real gravy I have ever tasted. I did have to add some water to it after it thickened a lot. Nutritional yeast is key. Will make this frequently!

Chicken with Mushrooms, Prosciutto, and Cream Sauce

This was so delicious! I did make a few changes though. I used chicken breast and will agree it was slightly dry (would probably be excellent in a crock pot), used turkey bacon, baby bella mushrooms and lite sour cream. The sauce makes this dish! Using the drippings gave it so much flavor. Sauce was thin and enough to put over noodles as a side dish!

Green Beans with Cherry Tomatoes

So delicious! Made them minus the sugar twice and they are so tasty and surprisingly sweet. Just beware and make sure you time your cooking appropriately so your beans don't get soggy.

Four Cheese Margherita Pizza

Strawberries and Cream Cake

Wow...I could not stop eating this cake. I made no substitutions. I had a hard time putting the icing on the outside, but I almost always do. The cake came out slightly dry but the strawberry and whipped cream filling in the layers and the cream cheese icing on the outside took it to the perfect moisture level. I think if the cake was any less dry it would have turned out soggy once it was assembled. I do not normally like cream cheese icing and only made it for my husband but, I loved this icing. I can't wait to have an excuse to make this again.

Boilermaker Tailgate Chili

I made a vegetarian version of this and it was the best chili I have ever had! I used brown ale for the beer and "browned" vegetarian crumbles and vegetarian breakfast sausage (Lightlife) before adding it to the chili and followed the rest of the recipe as is. It was delicious!

Chili-Roasted Kale

This was my first time cooking kale, so I didn't have much to compare to but I enjoyed it. It cooked in the exact time as specified which was great and was crispy on the edges. Definitely do not add too much salt as other mentioned. I layered the kale with oil and seasonings in the bowl and then stirred it to evenly coat which worked out great.

Slow Cooker Stuffing

2 main points: I did not cook it on high for 45 minutes and I prepared the mix (minus the beaten eggs and the broth) the night before, which I enjoyed. I had to work on TG day at 7am and cooked it in my crock pot at work. I woke up and added the beaten eggs and enough broth to moisten the mixture before I left the house and brought extra broth to moisten as needed. I only ended up adding a few splashes of broth while cooking but I did need to stir it frequently. I noticed that although it LOOKED like it might be soggy, it was actually very fluffy and a great texture. I only gave 4 stars because I had to stir it so frequently to prevent it from burning, and I only cooked it on low for less than 4 hours. Everyone said it was great1

Dilled Shrimp Salad

I made only one small change to this recipe: I only added the juice of 1 lemon and the juice of 1/2 of a lime and it was still too citrus tasting. It was also too runny. After both of those mishaps I had to add extra salt and pepper and some parsley to throw off the citrus taste as best as I could. Recommendations for next time: I would pat the shrimp dry after cooking to eliminate extra liquid then squeeze only a "spritz" of lemon and lime over the shrimp. Then mix remaining ingredients as specified. If it is still too runny and citrusy I might add a dollop or 2 of full or low-fat sour cream.

Angel Hair Pasta with Shrimp and Basil

I had to change a few things about this recipe. I tasted it as is and had to add more garlic and red wine. I would recommend to double, or even triple, the garlic, and substitute red for white wine.
