Oh, this pork roast is to die for, and I usually dont care for pork! The only change I made was to score the pork and marinate overnight and when I roasted it, I added 1 cup beef stock and onions, carrots and potatoes. The wine was added to the juices and thickened for a fabulous gravy. Yummmmmm! Even my picky 5 yr old grandson asked for seconds. There was enough of everything left so I froze them grouped together in labeled ziplock bags for another meal! This is definately a keeper and big hugs for Kathleen!
