Garlic Penne Pasta

Reviewed: Apr. 9, 2007
I really love this recipe. It is so easy. I did adjust a bit. I added a lot more julianned dried tomato, also mushrooms and small broccoli flourettes. This is just an awesome recipe for a single gal like me. I only used half a box of mini penne and will have enough for another dinner and a lunch. Yummy!! Thanks for this recipe!

Chuck's Favorite Mac and Cheese

Reviewed: Mar. 27, 2007
I am giving this 5 stars even though I did things a little differently. I didn't have sour cream so didn't use that. To the rest of the basic recipe, I added 4 finely chopped scallions including the green part, 1 1/2 tsp. dry mustard, 4 or 5 shakes of green tobasco, about 1 cup parmesan freshly grated and a cup of cottage cheese. I added about a cup of milk. I then sprinkled about 2 TBSP. Ital breadcrumbs on top, and shook some pre made parmesan over that then sprayed with butter pam. This came out spectacular. The best mac and cheese I've ever made and I've tried lots of recipes. Thank You!!!

Goof Proof Coconut Curry Chicken

Reviewed: Mar. 26, 2007
I made this recipe tonight for 2 as it is only me that I am cooking for. I did everything the same as the recipe except for adding a few raisins and some ginger and brown sugar as someone below suggested. This is just wonderful and just what I wanted. I have a second thigh to take to work for lunch tomorrow. Thanks for the wonderful recipe.

Cherry Rum Balls

Reviewed: Dec. 17, 2006
These are really wonderful. I make rum balls every year and decided to try thes and a couple other new recipes. The only thing I did differently, was to chop the cherries, and add a smidgen of Almond extract. Quite lovely!

Tomato-Cream Sauce for Pasta

Reviewed: Sep. 16, 2006
Very good and very like a sauce I already make. I used 1/2 of a medium onion, 1, 14 oz can diced italian tomato's and 1 can of italian stewed tomato's. I also used 3 garlic cloves, and about 1/2 tablespoon of italian seasoning. I had made a rump roast 2 nights before and added 2 large thick slices to the sauce. My old italian mil used to make a roast in the sauce and the slices in the sauce reminded me of that. Thanks! This was enough for me and my son and daughter in law, over ravaoli.

My Crab Cakes

Reviewed: Sep. 12, 2006
Thank you for this recipe. These were the best crab cakes I've ever made. I did change the recipe a little bit. I had leftover dungeness crab, about 16 oz. I added 1 sleeve of crushed 4 oz. toasted club crackers. I added a bit more old bay since I am from Maryland and we M'landers like O'lbay. I added extra garlic powder, but next time wouldn't add so much. I used 2 eggs and about 1/2 cup of mayo. I made these in one of those aluminum tins that you get muffins in at the grocery store. 4 muffins to a tin. I sprayed with butter crisco and then lined the tins with the breadcrumbs. I then just put the scoops of crab mixture in each tin (lightly, didn't pack down), then topped with more breadcrumbs and a final spritz of the cooking spray. I baked for about 1/2 hour at 350. WOW...these came out great except for a little too much garlic on my part. I also made an impromptu aioli sauce by just sweating about 2 teaspoons of (purchased minced garlic) in the same pan I made the green onions in. I put this in my mini food processer with about 1/2 cup mayo and 1/2 cut lemon. Wowee.....wonderful!!! LOL...I made fresh asparagus on the side. What a wonderful, wonderful meal and I still have 2 huge crab muffins for tomorrow!! Thanks again! I'm sure they will be smelling me at work tomorrow.
