About this Cook
I work at a Residential Treatment Center (Village) for abused children. I love to cook and my son and DIL like to bring their friends over on Saturdays for an afternoon of food and fun.
My favorite things to cook
Soups, Mexican, Curry, Italian, I will try almost anything once. If the kids don't like it we don't make it again. Kids (son and dil) are 28 and 21.
My favorite family cooking traditions
Ham and fixing for Easter, Corned Beef and Cabbage for St. Patricks day, Always make Hoppin John for New Years Day, Roast beef on rolls and potato salad for Christmas, Thanksgiving dinner. Cold Dungeness Crab with oil and vinegar dressing served with sourdough bread, butter, olives and fruit. Rum balls, chocolate and vanilla for Christmas
My cooking triumphs
Chioppino, My own Meatballs and sauce, Roast Chicken, Beef Stew.
My cooking tragedies
Made a chili recipe that no one could eat.

Garlic Penne Pasta
I really love this recipe. It is so easy. I did adjust a bit. I added a lot more julianned dried tomato, also mushrooms and small broccoli flourettes. This is just an awesome recipe for a single gal like me. I only used half a box of mini penne and will have enough for another dinner and a lunch. Yummy!! Thanks for this recipe!

Chuck's Favorite Mac and Cheese
I am giving this 5 stars even though I did things a little differently. I didn't have sour cream so didn't use that. To the rest of the basic recipe, I added 4 finely chopped scallions including the green part, 1 1/2 tsp. dry mustard, 4 or 5 shakes of green tobasco, about 1 cup parmesan freshly grated and a cup of cottage cheese. I added about a cup of milk. I then sprinkled about 2 TBSP. Ital breadcrumbs on top, and shook some pre made parmesan over that then sprayed with butter pam. This came out spectacular. The best mac and cheese I've ever made and I've tried lots of recipes. Thank You!!!

Goof Proof Coconut Curry Chicken
I made this recipe tonight for 2 as it is only me that I am cooking for. I did everything the same as the recipe except for adding a few raisins and some ginger and brown sugar as someone below suggested. This is just wonderful and just what I wanted. I have a second thigh to take to work for lunch tomorrow. Thanks for the wonderful recipe.
