Honey Walnut Shrimp

this was wonderful! my boyfriend was so excited to come home to this meal. I used the candied walnuts you can buy in the snack section of the grocery store instead of making my own.we doubled the sauce recipe, and its really good over rice too! (i also made the Local Kine Wontons from this site, which were excellent!)

Stuffed Chicken Valentino

this was great! will be making this quite often. did make a few changes. i marinated the chicken in a basalamic/olive oil/garlic combo for about 15-20 minutes, and skipped the chives, because i didn't have any. i did add the pancetta, as others had done and it really added another layer of flavor. oh, and when i rolled everything up, i blotted the excess marinade from the chicken or it's too slippery. also added some extra parmesan to the tops of the rolls when i took them out of the oven. they're still warm enough that i melts, and is gooey. great dish!

Cream Cheese Jalapeno Hamburgers

we really enjoyed this recipe. i love cream cheese in everything. i made a few (wonderful) changes. the biggest, and my favorite, was to add canned black beans (about 1/2 can) to the meat mixture. i wanted a little more flavor and moisture, and the beans made the meat so moist and extra meaty, if that's possible. i also used much less jalapeno and also added fresh tomato to the cream cheese mixture. cooked these under the broiler and they were awesome. my boyfriend went back for seconds.

Asparagus Roll-Ups

these were pretty good. the bacon was a little overpowering, so i think i'll leave that out next time. the one other thing i'd do differently is to add more than one spear per roll. the were too "dainty". and don't overcook the asparagus, or they will be very limp coming out of the over. blanch for just a min or two. and chill in cold water before baking.

Local Kine Wontons

absolutley yummy. we can eat dozens! they are really great fried in the oil(my favorite way)but also bake up quite well in mini-muffin pans. Just press the wonton wrapper into the wells in the pan and spoon in the filling and bake for 10 mins or so. great appetizer when done that way. i actually made them for thanksgiving last year, and they were a hit.

Butternut Squash Soup

this is really fabulous! I halved the cream cheese, which was plenty. The only addition i made was a little white wine before blending the hot soup. It "lifts" the flavors a bit, i thought. Also, the 6 cups of squash turned out to be 3 pounds almost exactly after i roasted and cubed it. We will be adding this to our Thanksgiving menu.

Cranberry Pistachio Biscotti

the perfect biscotti! we made these for a family christmas party over the weekend and they disappeared in minutes. everybody was asking for the recipe. should i share? we'll see. we drizzled them with a little chocolate, and that was so yummy!

No Roll Sugar Cookies

these were soooo good! i was looking for a macadamia nut cookie, without any other add-ins, which i couldn't find. so i ended up making these and adding some chopped unsalted macadamia nuts. the cookie is perfect and melt in your mouth good and the nuts added a nice crunch. **made these again for chrismtas minus the macadamia nuts. they look so pretty when you roll the balls in colored sugar before you flatten and bake them! the taste is perfect, light, airy, buttery and good.

North Carolina-Style Pulled Pork

made this for the superbowl (go giants!) and it was perfect. cooked it in a slowcooker so we added the hickory liquid smoke. upped the brown sugar a little bit. used the full 2 cups of vinegar. if you're craving the Carolina experience of a vinegar sauce, use the full two cups!

Artichoke Spinach Lasagna

this was just okay. i made it twice, once with rosemary, which was awful to my tastebuds, and once without. i really wasn't anything special. and i love spinach and artichokes. it was quite runny, although i did cut back the veg stock and used no-cook noodles.

A Simply Perfect Roast Turkey

this gets 5 stars because of how easy this is, especially for the first time turkey roaster, like me. my friends and i decided to have an impromptu thanksgiving meal on the hottest day so far this year, and i had to cook the turkey. the bird was so moist and perfectly browned when it was done. i stuffed it with my mom's sausage stuffing and sewed it shut. rubbed it with lots of butter and put butter under the skin between the breast like some other reviewers did. basted every half hour and it took 5 1/2 hour for a 19lb bird. the only thing i did a little differently was to cover the drumsticks for the first hour so they didn't overcook ( my mom said to do that, lol) oh, and i only cooked to 165 degrees and let it carryover for a half an hour. it was perfect. not too dry and cooked all the way through, even the stuffing.this really is a fool-proof method to cook a turkey. use this if you've never cooked a turkey, or if you've never cooked a good turkey. i promise it will come through for you.

Cream Cheese Frosting II

this is the perfect cream cheese icing! i made this to go with the "carrot cupcakes with White Chocolate Cream Cheese Icing" because i don't like white chocolate. i don't know how that icing is, but this one is perfect! not to sweet, and still has the tang of cream cheese. yummy!

perfect! sooo yummy :) i didn't really measure much, just eyeballed the ingredients. oh, used a 1/2 can of rotell tomatoes w/hot peppers in it instead of tomatoes. with the whole salmonella thing going on now, just seemed safer!
