Best Peanut Butter Cookies Ever

Reviewed: Jun. 5, 2011
these were quite good! i used natural peanut butter, and swapped out some of the white sugar for brown (about 1/4 cup worth). i think that made them even better. they were a bit greasy though, and the dough was a bit of a pain to work with. oh, and i added some pb/choc swirl chips too!

Rosemary Ranch Chicken Kabobs

Reviewed: Jun. 30, 2010
this is yummy! i heated up the extra marinade and added a tablespoon of butter , a few splashes of milk, and about 1/4 cup of sour cream to it without boiling to make a quick sauce to go over rice.

Special Buttercream Frosting

Reviewed: May 4, 2009
great stuff! i subed 1/4 cup of butter for some of the crisco and uppped the vanilla a bit for flavor. the ability to decorate was great and the icing was tasty! DON'T try to double this recipe in a convential stand mixer, lol!! it's too much!! I'll have to try butter flavored crisco next.

cook in the beer, in the slowcooker for 8 hours. taste the broth around the 5 hour mark, add more sugar or s&p if necessary. add the veg and cabbage at the 6 hour mark. cry over the wonderful taste. awesome!

Fusion Chili

Reviewed: Mar. 5, 2009
honestly i would say 3 1/2 stars, but that's not an option! this is a very good meal, but it lacks the "chili" feel. it's decidley italian in flavor, except for the chilies. I thought there was too much sausage and would have liked peppers and more beans. Really enjoyed it over rice, but the flavor was more italian then anything. We made this for company, and the whole (giant) pot was gone by the time the night was over, so it was a hit though!

Mushroom Blue Cheese Turkey Burgers

Reviewed: Feb. 16, 2009
the concept was very good, but we switched it up a bit. pre-cooked the mushroom and onions to carmelize them a bit, and also mixed blue cheese into the meat mixture instead of on top. was a little heavy handed with the blue cheese. served them on chibatta bread to soak up the juices. hubby though they were yumm-o, i though they were a little blue cheesey. i think if you looove blue cheese, add it right in with a heavy hand. if not, add to the top of the burger as called for so it's not so pungent!

Italian Scallop and Shrimp Salad

Reviewed: Jan. 28, 2009
my mom and i made this for a picnic, and it was okay. we definatley needed to jazz it up a bit and tweak it. you need to really like shrimp and scallops though to even bother!

Chicken Enchilada Soup III

Reviewed: Sep. 2, 2008
this was very bland. it was missing something, and i don't know what exactly. the flavors were very muddled. possibly needs some acid and more heat.

Guacamole

Reviewed: Jun. 24, 2008
perfect! sooo yummy :) i didn't really measure much, just eyeballed the ingredients. oh, used a 1/2 can of rotell tomatoes w/hot peppers in it instead of tomatoes. with the whole salmonella thing going on now, just seemed safer!

Cream Cheese Frosting II

Reviewed: Jun. 19, 2008
this is the perfect cream cheese icing! i made this to go with the "carrot cupcakes with White Chocolate Cream Cheese Icing" because i don't like white chocolate. i don't know how that icing is, but this one is perfect! not to sweet, and still has the tang of cream cheese. yummy!

A Simply Perfect Roast Turkey

Reviewed: Jun. 8, 2008
this gets 5 stars because of how easy this is, especially for the first time turkey roaster, like me. my friends and i decided to have an impromptu thanksgiving meal on the hottest day so far this year, and i had to cook the turkey. the bird was so moist and perfectly browned when it was done. i stuffed it with my mom's sausage stuffing and sewed it shut. rubbed it with lots of butter and put butter under the skin between the breast like some other reviewers did. basted every half hour and it took 5 1/2 hour for a 19lb bird. the only thing i did a little differently was to cover the drumsticks for the first hour so they didn't overcook ( my mom said to do that, lol) oh, and i only cooked to 165 degrees and let it carryover for a half an hour. it was perfect. not too dry and cooked all the way through, even the stuffing.this really is a fool-proof method to cook a turkey. use this if you've never cooked a turkey, or if you've never cooked a good turkey. i promise it will come through for you.

Artichoke Spinach Lasagna

Reviewed: Mar. 29, 2008
this was just okay. i made it twice, once with rosemary, which was awful to my tastebuds, and once without. i really wasn't anything special. and i love spinach and artichokes. it was quite runny, although i did cut back the veg stock and used no-cook noodles.

North Carolina-Style Pulled Pork

Reviewed: Feb. 8, 2008
made this for the superbowl (go giants!) and it was perfect. cooked it in a slowcooker so we added the hickory liquid smoke. upped the brown sugar a little bit. used the full 2 cups of vinegar. if you're craving the Carolina experience of a vinegar sauce, use the full two cups!
