Tater Tot Bake

I made it with 2 lbs. meat. I think any less than that would have been overpowered by the tater tots. With the 2 lb. meat is was fabulous. This recipe fed my family of 5 for 2 whole meals! That doesn't happen very often. Might try some variations like bacon swiss burger bake. Hmmmm.

Authentic Louisiana Red Beans and Rice

Even my kids liked it. I ran out of rice and it was good even without the rice. Just needed a little salt.

Slow Cooker Fifteen Bean Soup

This is outstanding! My 2-year-old ate 3 bowls. The only complaint I heard was my 9- and 6-year olds ... "Where's the meat?" Leftovers got bacon pieces, next time I'll add some smoked sausage or kielbasa.

Tomato Curry Chicken

My kids say it tastes like ramen; they love it! I replaced the tomato soup with a can of diced tomatoes in juice. I like it chunky. Super delish!

Sushi Roll

Baked Zucchini Chips

Pretty good with a little salt. My kids even ate them. I think I'll slice them a little thinner or bake them a little longer, though. They were a little too al dente for me.

Slow Cooker Maple Country Style Ribs

I have lost my dry rub recipe and I'm trying to find a replacement. This sounded pretty good, but I think I'll go back to dry rubs. Too messy - although ribs are kinda supposed to be messy, huh?

Hot Shredded Chicken Sandwiches

I used canned chicken, so it didn't have to cook so long. It left it a little dry, though, so I'll add a can of cream of chicken soup next time. All in all, it was pretty good and we will have it again.

Pumpkin Cream Cheese Muffins

Super delish!! My kids, even my 2-yr-old, love these. I just put the whole can of pumpkin in and got a couple of extra muffins. It's a good thing, too, because they disappeared quickly!
