Ok - this recipe is the best! I risked everything and tried it for the hubby's birthday dinner. He said I outdid myself! It was truly the best pot roast I think I've ever had. I accidentally used the whole package of the dry soup mix. I used some sherry and beef consume instead of vermouth to deglazed the pan (roast in). I heated the consume and then removed from heat and added a can of cream of celery and the dry soup mix. Then poured this over the roast and one small cut up sweet onion. Only other change was cooking the veges in for two hours at the end instead of one. It was awesome!!!
