About this Cook
I don't cook as much as I would like to, as I work full time and have a 2 hour commute, so I look to allrecipes for the quick meals, but occasionally I dive into a recipe to challenge me and show my family that I can cook more than mac-n-cheese!!
My favorite things to cook
My families favorite is my Chicken Fried Chicken, I make it with country gravy, mashed potatoes and green beans. It's a very involved meal and gets all the burners hoppin' but well worth it!!!
My favorite family cooking traditions
Teaching my son to cook from a very early age. He loved to be in the kitchen with me and some of our best memories are cooking together.
My cooking triumphs
While living in Florida, I discovered Mahi-Mahi (dolphin fish) and I fell in love with it. Being back in Minnesota, it was hard to find, but I finally found it at my local grocery store, I brought it home, went onto Allrecipes and found a margarita mahi-mahi recipe, that with one of my favorite recipes, the sauteed garlic asparagus, and some garlic white and wild rice on the side, with a glass of wine, it was absolutely to die for!!! My husband couldn't say he loved it enough! Thanks to everyone at allrecipes, you made me look like a seasoned chef!!
My cooking tragedies
Please don't ask me to make anything having to do with bread! I put the rolls in the oven at Thanksgiving, and forgot about them, a disaster! The worst was forgetting about the garlic bread, I opened the broiler pan to tiny, black, flaming hockey pucks!!

Quinoa with Sweet Potatoes and Broccoli
I got creative with this recipe based on other reviews and omitted the garlic powder, used 3 cloves fresh chopped, threw those in the pan with the onions, added all the other ingredients plus sprinkled ground ginger, some nutmeg and cinnamon then about a 1/2 cup of dried cranberries, just a hodge podge of ingredients and it turned out amazing! Each bite has a surprise of flavors and I chopped up the almonds so they weren't whole and it gives it a nice crunch. This is one of those recipes you can't really mess up and fun to play around with.

Guacamole
I have made this several times, it's absolutely to die for!! 1 teaspoon of salt is a little much for my taste so I put in less. This is the only guacamole recipe I will ever use.

Pollo Fajitas
Rave reviews from even the pickiest eater of all, my son, who not only had seconds, but thirds!! Very easy to make and during the 1/2 hour the chicken was marinating I was able to get the dishes done and kitchen spotless so when dinner was done there was very little cleanup for the boys, they liked that :) Will make again and again.
