Bob's Awesome Lasagna

This was just an awesome recipe! Used some ground pork along with the beef, Italian cheese mix, and didn't use the onion, but everything else I followed to a T. The lasagna was so yummy that even my fussy 6 year old asked for seconds! She never even finishes any of the store bought lasagna we've purchased before so from now on, this is our lasagna. Thanks Bob!

Warm Brussels Sprout, Bacon and Spinach Salad

This was awesome! Next time though, I will omit the caraway seeds, as the smell totally turns me off. But even with them, once I tasted, they were soooo good!

Maple Salmon

I am a huge salmon fan, but this didn't do much for me. However, hubby loved it and said it was the best. Since he's not a fan of seafood, if he loved it, I rate it 5 stars! :)

Creamy Potato Leek Soup II

Holy cow, was this ever good! I only had 2 leeks but it was still so flavourful due to the bacon. After I took the soup off the heating element, I blended it a little with my Braun handheld and the texture is so fantastic, it's like a meal in itself! From now on, this will be one of my main comfort foods...especially now that winter is upon us! :D

Bacon and Cheddar Stuffed Mushrooms

This was fabulous. I didn't have crimini's but needed to use the button mushrooms we had. I had eaten 4 before I even realized it! Hubby ate 2 and said they were very good. Used shallots instead of onions, and packaged (real) bacon bits to save time.

Pork Chop and Potato Casserole

I was very impressed with this. If my 3 year old daughter says, "Mommy, I love this meat!", then this dish is definitely a 5 star recipe! Hubby and I couldn't get over how tender the pork chops were, even after re-heating the leftovers! The only drawback was that even though I pre-seasoned the potatoes, they were still kinda' bland. But I think that maybe I shoulda' bought a different kind. Also, seasoning the pork chops before browning is a must!

Thighs on Rice

Wonderful! I followed another reviewers suggestion and cooked with parboiled brown rice. Sprinkled lots of lemon pepper and parsley on top before putting in the oven. Hubby was the first to try it and raved over how good it tasted. When I finally got around to eating dinner, I was very pleased with how it turned out. Even my niece and her new boyfriend, who were visiting, complimented me on this dish!

Guacamole

Good stuff! I love coriander (aka cilantro) so it was a treat to have this ingredient included. The second time I made this, I threw in some chopped jalapeno pepper for extra punch...yum!

Orange Glazed Carrots

This was a perfect side dish for roasted chicken, along with parmesan new potatoes! Hubby decided that instead of cooking on the stovetop, he blended all the ingredients and poured over the carrots in a casserole dish, then placed in the oven with the chicken and potatoes. They turned out fabulous!

Garlic Red Potatoes

This was a great recipe to use for parisienne potatoes! Used as a side dish with roasted chicken, along with Orange Glazed Carrots, this made a fantastic meal... Hubby would like to use a little less lemon next time, but I had absolutely no complaints against it...had to go back for seconds!! :)

My Best Clam Chowder

Simply outstanding! So easy to make for the results you get. I followed fellow reviewers' suggestions and got 5 cans of clams, and used bacon (which I love in everything anyway!). Next time, I'll leave out the celery and throw in some corn. I've always been leery of making clam chowder because it seemed like such a daunting task, but thank goodness for finding this recipe...I'll always be making this from now on instead of eating the canned stuff!

Stuffed Mushrooms with Swiss Cheese

I just loved this! Used shallots instead of onions, and we didn't have swiss cheese so I put slices of Brie on top to melt over the mushrooms. Amazing!

Cowboy Mashed Potatoes

This was just awesome! We eat mashed potatoes all the time, and this recipe is such a nice variation on the same old, same old! The carrots and potatoes blend so nicely, and the jalapeno adds a nice nip to the dish. I couldn't find white corn so I added the frozen peaches and cream corn that we had...I honestly think that the white corn would have gone much better so will stock up on it for next time!

Salmon with Brown Sugar and Bourbon Glaze

Such superb results for such an easy recipe! Hubby forgot to pick up bourbon so I used Bushmills Irish Whiskey instead. Made this as a main course for a dinner party and everyone raved! Delicious and will definitely make again...

Chili I

This has got to be the best chili recipe ever! My hubby just loved it...he brought some to work and his boss ate two bowlfuls! I have subsequently emailed him the recipe to avoid him bugging hubby about me making more, LOL! Our local grocery didn't have any sirloin so we just used 2 lbs. of lean ground beef. Fantastic with garlic bread for dipping. Wasn't as hot as we like it, so will add more chili peppers next time. Cheers!

Pork Chops Stuffed with Smoked Gouda and Bacon

Wonderfully easy and tasty recipe! Our grocery had only precut ones, so we weren't able to get the thicker cuts which meant there was lots of stuffing left over. Regardless, this was real simple to make and at the end of dinner, my guest and I were gnawing happily on the bones, LOL!

Amy's Cilantro Cream Sauce

This was the most *awesome* recipe ever! I made it to bring to a family get together, and everyone demanded that I send them the recipe. Even though we had a reservation at an all-you-can-eat restaurant, we still gorged ourselves with tortilla chips and this dip/sauce! Didn't have any tomatillo salsa, so I chopped up some marinated jalapenos, which gave it just the right "bite". So fabulous...I can't wait to make it again and try it over some white fish fillets (ie orange roughy, tilapia) or with pita triangles.

Pan-Fried Asparagus

Wonderful recipe! So easy to throw together for such a delicious side dish! I've made it twice so far and will definitely be cooking this regularly (especially now that asparagus is in season!) Fantastic with grilled sirloin steak and steamed mini new potatoes.

Simple Country Ribs

Awesome recipe! Terrific for when you don't have 8 hours to marinate the ribs. Threw in a whole bunch of garlic cloves instead of using onions and put the ribs in the oven at 375 while reducing the sauce at high heat and frequently basting the ribs with. The ribs turned out saucy, tender, and so tasty! Was perfect with steamed mini new potatoes and mixed vegetables. Even my four year old asked for more!
