Grilled Potatoes and Onion

These were really yummy! I'm allergic to onions so I just throw in whole garlic cloves. I loved it, hubby loved it, 3 year old daughter doesn't like potatoes so she wouldn't even try it. But if she had, I'm sure she would have loved it too! :)

Tasty Buns

I cannot believe how easy this was to make!!! Forgot to buy dinner rolls one night and found this recipe, what a lifesaver! Hubby thought they were perfect and daughter gobbled 2 up for breakfast! (Toasted w/ butter) We made another batch a couple of nights ago for leftover chicken sandwiches. Great recipe for an all purpose bun!

Ooey-Gooey Cinnamon Buns

Tastes pretty good, but didn't blow my mind or anything like that. Hubby liked it more than I did. Took a long time and great effort to make IMO. Glad I used the Clone of a Cinnabon icing too as that really added a touch of yum to them.

Irresistible Irish Soda Bread

This was definitely a great bread for sopping up stew! I cut the sugar down to 1/4 cup but felt that it needed to have been cut down a bit more. I made 2 loaves for our St. Pat's dinner and everyone had several slices, including the kids. (They were happy just to have it warm with butter!)

Irish Chicken and Dumplings

Made this (along w/ Irish Stew) for our St. Pat's dinner. Man, this was the bomb! Spending the afternoon cooking was well worth it when the results are devoured! The 'sauce' was so tasty and the chicken was great but the next time, I think I'll add more carrots and cut the potatoes just a 'leetle' bit smaller (my chunks were too big). Definitely a 5 star rating! Sierramum

Irish Lamb Stew

Made this for our St. Pat's dinner. Smelled kinda' funky the day of cooking, but the next day...YUM! This was soooo good, especially sopped up with homemade soda bread. The younger kids didn't like it, but that's just because they don't like lamb. Everyone 18 and over just raved over it! Also used Guiness instead of wine.

Apple Strudel Muffins

Had extra ingredients left over after cooking for our St. Pat's dinner so made up a batch of these. Oh my God, my husband couldn't stop raving over them!!! He loved them more than the apple pie, and he is a TOTAL apple pie freak! Everyone who came over for the dinner left with a muffin as a 'treat'. This morning, we went to the grocery store to get more supplies to make a couple more batches...one for us, and one for me to take to work tomorrow! (also followed the suggestions to make extra topping to throw into the batter and it was good advice!)

The Best Rolled Sugar Cookies

Made these as a take home for the kids who were at our St. Pat's dinner. Made the icing as suggested but added several drops of green food colouring. Turned out fabulous! The kids couldn't get enough of it. Definitely a make again.

Creamy Spinach Casserole

Garlic Mashed Potatoes Secret Recipe

This was sooooooo good! Used a whole head of roasted garlic, even though I cut the recipe to serve 6, and it was fantastic. However, I will cut down a little on the Oregano next time. Made this with Baby Back Ribs (also found here), and wow did the two go hand in hand!

Baby Back Ribs

This was the bomb! Cooked this in the Reynolds bag and it came out more than perfect. Also took a previous posters tip and rubbed the ribs with seasoning spice (The Keg's) prior to coating with barbeque sauce. Hubby told me that from now on, I cook the ribs! :)

Seafood Enchiladas

My husband, stepdaughter, and even my 18 month old just wolfed this dish down! Hubby isn't a huge mexican-type food fan, but he couldn't got over how delicious this dish was! Definitely a recipe to keep for entertaining!
