Pork Chop and Potato Casserole

Reviewed: Nov. 6, 2002
I was very impressed with this. If my 3 year old daughter says, "Mommy, I love this meat!", then this dish is definitely a 5 star recipe! Hubby and I couldn't get over how tender the pork chops were, even after re-heating the leftovers! The only drawback was that even though I pre-seasoned the potatoes, they were still kinda' bland. But I think that maybe I shoulda' bought a different kind. Also, seasoning the pork chops before browning is a must!

Wonton Soup

Reviewed: Nov. 6, 2002
This was very good! I went to two different grocery stores and neither had wonton wrappers. Therefore, I bought a package of egg roll wrappers and cut them in half. The noodles were thicker than I like, but the filling was still yummy. The trick to preventing the wontons from becoming a gloppy mess is to cook them in boiling water first, then putting them in the broth. I also had some left over bok choy from the stir fry that I was also making so threw that in the soup during the last 2 minutes of cooking. Wonderful!

Buttermilk Fried Chicken with Gravy

Reviewed: Nov. 4, 2002
Personally, this dish didn't thrill me much. I marinated in the buttermilk for about 2 hours; added about 1/3 cup of cornmeal as per another reviewer; but still found the coating falling off while frying plus it really should have been seasoned more. I didn't make the gravy as we weren't having mashed or any kind of potatoes, which I'm kind of glad as it was just too much work for the results. However, hubby said he thought it was alright. I don't think I'll be making this again.

Bacon and Cheddar Stuffed Mushrooms

Reviewed: Nov. 4, 2002
This was fabulous. I didn't have crimini's but needed to use the button mushrooms we had. I had eaten 4 before I even realized it! Hubby ate 2 and said they were very good. Used shallots instead of onions, and packaged (real) bacon bits to save time.

Creamy Potato Leek Soup II

Reviewed: Nov. 3, 2002
Holy cow, was this ever good! I only had 2 leeks but it was still so flavourful due to the bacon. After I took the soup off the heating element, I blended it a little with my Braun handheld and the texture is so fantastic, it's like a meal in itself! From now on, this will be one of my main comfort foods...especially now that winter is upon us! :D

Maple Salmon

Reviewed: Nov. 2, 2002
I am a huge salmon fan, but this didn't do much for me. However, hubby loved it and said it was the best. Since he's not a fan of seafood, if he loved it, I rate it 5 stars! :)

Warm Brussels Sprout, Bacon and Spinach Salad

Reviewed: Nov. 2, 2002
This was awesome! Next time though, I will omit the caraway seeds, as the smell totally turns me off. But even with them, once I tasted, they were soooo good!

Cowboy Mashed Potatoes

Reviewed: Oct. 30, 2002
This was just awesome! We eat mashed potatoes all the time, and this recipe is such a nice variation on the same old, same old! The carrots and potatoes blend so nicely, and the jalapeno adds a nice nip to the dish. I couldn't find white corn so I added the frozen peaches and cream corn that we had...I honestly think that the white corn would have gone much better so will stock up on it for next time!

Best Spinach Dip Ever

Reviewed: Oct. 27, 2002
Amazing! I love spinach dips but they all seem to contain onions, which I am allergic to. Since I love water chestnuts as well, this is the perfect dip for me! Hubby thought it was great as well. I didn't change a thing, it was superb!

Broccoli Cheese Bake

Reviewed: Oct. 15, 2002
This was a simple recipe to make. Used shallots, not onions. The swiss cheese was a bit too sharp so if I make this dish again, I'll probably use a different, milder cheese. Overall, it was a good sidedish for Thanksgiving dinner.

Dill Potato Salad

Reviewed: Oct. 15, 2002
I followed this recipe to the 'T' and was very disappointed in how it turned out. Hubby and I found this very bland and it was the 1 dish still standing at the end of the family Thanksgiving dinner.

Joelle's Famous Hot Crab and Artichoke Dip

Reviewed: Oct. 15, 2002
This was a 10 star dish. Served it as an appetizer for Thanksgiving dinner and the whole family dug in. Loved the bread bowl, but was also great with those new scoop style tortilla chips (next time I'll get the reduced salt ones tho'). Definitely a keeper, will make again and again!

Easy Mushroom Rice

Reviewed: Oct. 15, 2002
I wasn't too big on this dish, but nearly everyone who came to Thanksgiving dinner really liked it. My brother had 3 big helpings, and the leftovers went home with my niece (I had to substitute the beef broth with water due to her being vegetarian). I used long grain brown rice and condensed cream of celery soup instead of cream of onion.

Homestyle Turkey, the Michigander Way

Reviewed: Oct. 15, 2002
I don't eat turkey, but coooked this for the big family Thanksgiving dinner. Everyone loved this, even my mainly vegetarian niece who tried a little bit. My sister said the meat was so tender it melted in her mouth and hubby was able to use the cooking liquid to make a killer gravy! Instead of dried minced onion, I threw in some freshly minced shallots and garlic then stuffed it with the Awesome Sausage, Apple and Cranberry stuffing. What a perfect pair!

Eggless Sweet Potato Casserole

Reviewed: Oct. 15, 2002
This dish was off the scale! I served it with Thanksgiving dinner and my whole family - from the 3 year old toddlers to 80 year old Dad - went nuts over this. We didn't have nutmeg but I don't think skipping it made any difference; it was still amazing!

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Oct. 15, 2002
Surprisingly easy to make. I used pork sausage, but feel that ground turkey/chicken might have been better. Stuffed the Thanksgiving turkey with it and our dinner guests were very complimentary.

Butternut Squash Soup

Reviewed: Oct. 15, 2002
Served this as first course for Thanksgiving dinner -- everyone rated it 10 stars! I only put 1/2 the cream cheese as per the other reviews plus shallots instead of onions and real butter (we don't use margarine) with packaged chicken stock. It came out creamy and delicious. Everyone was scraping their bowls to get the very last drop. Fabulous recipe, Mary, thanks!

Avocado Dip II

Reviewed: Oct. 15, 2002
I have always made guacamole for snacking but with the family over for Thanksgiving, I decided to try this as an appetizer. Well, goodbye guac cause this just kicked!! I loved this so much as did my family, even 80 year old Dad. Served with those new scoop style tortilla chips, there was none left! Thank you, Holly and thank you, Christy! :D

Green Bean and Mushroom Medley

This was sooooo easy to make! I love mushrooms and carrots; hubby likes all the ingredients; toddler loves carrots and green beans making this an ideal dinner sidedish. This was very tasty, but I used shallots instead of onions.
