Chocolate Ganache

Candied Carrots

this was my "healthy" veggie side dish at Christmas - I just steamed the carrots in a microwave baggie, for all of 7 minutes - then tossed them in the sauce. YUMMY! love it - and so simple!

Haddock Au Gratin

my back was out yesterday and I couldn't stand in the kitchen for long. I had already taken a large chunk of haddock from the freezer .. so I printed this one up for the boyfriend to make for us. altho he said he didn't think he'd like it, he made it anyway.. he talked of how simple it was as he was cooking - and how YUMMY it was as he was eating it! we served it with brown rice cooked in veggie stock & green beans - and had an EXCELLENT dinner without much effort at all! thanks for this one, it's now in the recipe box for future reference! :)

Restaurant-Style Prime Rib Roast

** updated rating ** I used this recipe on a 20 lb roast on Christmas; the quantity of rub was sufficient, even for the large hunk of meat! the one thing I did a little differently was to cook the roast for 15 at 475 first, then down to 325 for the remainder. I was using a roasting oven, rather than traditional. cooking time was about 3 hours - and the meat was perfect - everyone raved!

Zucchini Carrot Muffins

I had really good results.. but only by using this recipe as a base idea. I didn't have the carrot cake mix I thought, so used a spice cake & used grated carrots in place of the zucchini. I also increased the applesauce by the amount of oil & omitted the oil completey. it ended up a little on the thick side, so I added about 1/4 cup water. I added cinnamon chips instead of raisins. I chose not to frost, altho if I did, I would use cream cheese frosting. instead I just sprinkled extra cinnamon chips & halloween candies on top of the muffins before baking, to make them seasonal. the muffins were a hit at the party!

Easy Roasted Pork

I've made this several times - and love it every time. The roomie asks for it, and the boyfriend's gonna have it for dinner tonight for the first time. I fully expect to have even MORE requests after tonight! yummmmmmy!

Cake Mix Cookies VI

I didn't have a yellow cake mix, so I used devil's food.. then found that "someone" ate the last bag of chocolate chips! SO - I used about 1.5 C of peanut butter instead, to boost the flavor... YUMMY! and so simple. thanx for the recipe, I will make these again, in various ways.

Fancy Potatoes

I felt 2 pkgs of cream cheese was too much for the quantity of potatoes.. maybe mine were smaller spuds. I mixed in the cheddar, used fat free sour cream, and reduced fat cream cheese, and lots more garlic.. also dalloped butter on top w/the rest of the cheddar - YUM!

Slow Cooker Chicken Taco Soup

this wasn't what I thought it would be, but it was tasty. I'd call it more of a chicken CHILI, but that's semantics! forgot the corn, darn it, used pinto & kidney beans (boyfriend got the wrong "chili" beans), threw in some green chiles, and since I NEVER used prepared taco seasoning, I just dumped loads of chili, garlic, dried cilantro, cumin & onion powder. it was better day two with hot corn bread! yum!

Slow Cooker Chicken Stroganoff

I'd give this 5 stars, if I hadn't altered so much. I started by adding a carton of chopped mushrooms & 1/2 of a chopped onion to the chicken step, altho still included the butter & packet of dressing seasoning, with an extra 2T chopped garlic & 1/2c chicken broth. since I put the breasts in frozen (forgot to thaw, for cubing first), so I just shredded the meat when it was cooked through. to the final step, I substituted reduced-fat versions of the cream cheese & cream of mushroom soup, and added about 3/4c fat free sour cream. we used wheat egg noodles - and enjoyed every bite! I'll definitely be making this one again, and will not feel guilty about having seconds! next time, I'm omitting the butter & just adding a little more broth instead tho.

Blueberry Sour Cream Coffee Cake

I didn't try this one; I made it as a gift for my boyfriend's parents. They both raved! The only thing I did different from the recipe was not to include pecans - didn't have any, and his mom doesn't like them. I will make this for US next time, and will add lemon, use fat free sour cream, reduce the sugar & use 1/2 splenda per another suggestion (bf's diabetic). My plan is to make a glaze for drizzling (confectioners & lemon juice), rather than just the sprinkle of confectioners I used this time. YUM - can't wait to try it again!!

Sugar-Free Peanut Butter Cookies

I agree with some others.. cooking time was longer in my oven. I tried just 1/2 a recipe, to see if my diabetic bf would like them. looks like I'll be making the full recipe next time. I'm not a diabetic, and have a HUGE dislike of artificial sweetners.. I gotta say that these are actually OK! I ate more than one, and couldn't tell they were sugar-free at all.

Bean Salad

I'm rating according to my adjustments: I only used black & pinto beans (2 cans ea), omitted the parsley and instead added about 4T chopped cilantro, 2 chopped jalapenos, and lots of extra lime juice + a total of about 6 oz of the salsa (I found it WAY too dry)... that being said - we really enjoyed it, and I'll definitely make it again.

Cream Cheese Squares

I made this one for my diabetic boyfriend.. used splenda in place of sugar, and omitted the melted butter on top. I also added a layer of sugar-free strawberry preserves over the cream cheese. This dessert was a HUGE success and was gone in no time flat!

the diabetic bf loves this one, I make it all the time. I often will use the pre-made graham cracker crusts, and sometimes cheat w/the chocolate ones too.. he particularly loves it when I throw in some sliced bananas!

I like this one a lot, and the family raved. I only used 4 cans of beans, for the # of guests.. and would keep it that way. also - I didn't see where we're told about draining or not.. so I did PARLTLY. next time I'm draining all the way. good stuff - thanks for this one!

Unbelievable Chicken

made this for a family bbq today, several picky eaters in the group. everyone loved it, they raved! the only thing I did slightly different from the recipe.. I marinated, but took about 1/3 out first & used it for basting on the grill. YUMMMMY - this WILL be made again at our house!

Cumin Turkey Burgers

loved the flavor, wasn't a big fan of the consistency. I should have read more of the previous reviews - and maybe chilling the meat before grilling would have helped. I think next time, and I WILL make this again, I will use less of the liquid ingredients, or maybe just make it a 2 lbs of meat recipe. good stuff tho, even my picky mom liked them.. and worth another try!!

Chocolate Frosting I

Loved this frosting! Altho, to be honest, I did tweak it a bit. 3/4 cup on the cocoa & 3 cups of the powdered sugar - sheer perfection! Got rave reviews on home-made walnut brownies.. will be a staple henceforth. Thanks Tianne!
