Classic Spanish Sangria

Double batch, cheap red blend, spiced rum, same citrus fruits plus frozen pineapple and mango chunks - YUM! I've made it before, always a big hit. The one thing I do differently, because I didn't read it wrong the first time, I just put it all in a glass pitcher at once and let it mull 3-4 hours.

Zucchini Brownies

I was totally ready to give this a lower rating. Wasn't fond of the thick, dry batter (and I didn't even add the nuts), but I love the idea of zucchini in desserts, so I finshed the batch. Mine baked much slower tho, at least 45 minutes! I LOVE them, and will make them again. Co-workers raved, even after finding out about the secret ingredient! I used my go-to fudge frosting from the site, "brownie frosting" - super simple, works every time. Thanks for this one, I'll be visiting again & again!

Easy and Delicious Slow Cooker Cassoulet

Really good. I used white kidney beans, it's what I had, and it was yummy. I'll make it again with the Northern, and I think I'll like it better. I used one of mom's home-canned jars of tomatoes (undrained), much more tomato and juice than the recipe called for - but I'm glad. I like it a little soupy, not so thick.

Chewy Peanut Butter Brownies

call it 3.5 - these were too sweet for me, but best friend loved them. I'll try this again, lessen the white sugar, maybe add an egg, and definitely a little more peanut butter. I wanted it a little less "gooey" and a little more cakey brownie. but great starter!

Pumpkin Crumb Cake

I'm rating based on some adjustment advice I took from other reviews. I cut the butter substantially - used only one stick for the whole recipe and it was more than sufficient. I added about 2/3 of the stick to the base cake and the rest to the topping. Although it seems there's not enough dough for the base, there is plenty - just get your clean hands into it, and spread! I added lots more spice to the filling, including pumpkin pie spice, and nutmeg, and cut the sugar slightly. I used about 1/2 of the sugar in the recipe for the topping and I stirred the chopped nuts into the topping before I crumbled it on the pumpkin, might as well make that one step instead of two. I saw where several people said this was more of a bar.. mine rose just fine & was a perfect CAKE, as written. This was a huge hit at work tonight, with whipped cream and good coffee. I'll definitely make it again, with the changes as noted.. and I might add some nuts to the crust level too - I like it crunchy!

Crab Quiche

I had to change this one a bit, for what I had on hand.. used REAL crab, an "italian blend" cheese, 2% milk (I'm sure cream would be an awesome touch), Cholula pepper sauce, and added some garlic seasoning. Plus, I've made many quiches over the years, and ALWAYS put the chunky ingredients in the crust, then pour the egg mixture over, so I did it that way. It was super simple, and it turned out really yummy! Will make again!

Black Bean Salad

I've made this many many times, and I LOVE it every time, so does everyone I serve it to. I do make it slightly different tho, with no bell peppers, pimentos & usualy no avocado. Plus I at-least quadruple the garlic, using minced fresh! YUMMMMM! Thank you so much for this one! Definitely on my faves list!

Oh-So-Good Chicken

mom made this for dinner the other day & shared - I love it! she didn't add mushrooms, but did add a small can of the chopped green chiles, and probably extra cheese, knowing mom! I'll make it hotter with jalapenos instead of green chiles, and definitely NOT mushrooms, they don't fit with the Mexican flavors. I'll probably throw in some sliced black olive tho - that would be yummy! I think this would be good with pork instead of chicken also. mmm - making me hungry just thinking about it!

Very good, big hit at work! I used a bundt pan, cooked it about an hour, and made my own Irish Cream/Whiskey glaze rather than a full-blown frosting - and it was yummy! Pic posted.

Pork 'n' Potato Dinner

When I first saw the recipe, my thought was "where's the garlic?" Then I read reviews speaking of blandness. The only changes I made were to NOT dredge in flour before browning the chops, reduced the oil, and I added this wonderful zesty garlic seasoning I put on everything. Oh, and I mistakenly used 1 C water & 1 T bouillon.. so I ended up with more sauce. Since I didn't flour the chops, I needed a teeny bit of corn startch to thicken my sauce - and YUMMY! Simple one pan recipe, will make it again.

huge success - everyone at work loved them! I used the cook versio of the pudding, cut 18 of the rolls in half, and added raisins.. otherwise, followed recipe. next time, I use slightly less butter - but otherwise - PERFECT!!

Grilled Bacon Jalapeno Wraps

my family has made these for years.. however we ALWAYS season the cream cheese filling. I use minced garlic & fresh cilantro, but the cajun version suggested sounds good too. I like them best on the grill, but there are "popper racks" you can buy for the oven, no soaking in bacon grease that way!

Brownie Frosting

my GO-TO frosting recipe for a couple years now! I haven't made anything else since finding this one. SO simple, and it turns out lovely and smooth - you just gotta work fast, once it's poured on the brownies. The only thing I'd say for advice .. sometimes I have to put the pan back on the burner, low heat for a short time, to melt the last little bit of chocolate that's being stubborn.

KILLER good stuff! I was very happy to have leftovers because half my company canceled on me at the last minute! I wish mine had as much liquid as some comments refer to, though. mine wasn't dry in any definition of the word, but I wanted more juice!

Coconut (Haupia) and Chocolate Pie

this didn't thrill me, like I expected. like several other comments stated, I was looking for more of a coconut flavor than came through. the chocolate part was really good, but the coconut taste was almost non-existent. otherwise, quantities were right on, I had no issue with it setting.. and it did make for a pretty presentation. I put the white layer down first, layered with chocolate, then whipped cream.. I liked the look better than the pics with the white on top.

Green Tomato Cake

I love this recipe & can't believe I never rated it before. I usually don't tell people about the tomatoes until after they've tried it & raved! This is one of my most-requested desserts! I too cut the sugar to about 1.5 cups, and don't usually put in the raisins (only because I have too many friends who don't like them). Also - I have tried it with the cream cheese frosting & without.. I prefer without, it's just too good all on it's own! YUMMY - one is baking now & the house smells so good! I can't wait for later! **as a side note - I have since tried this in a bundt, and had good success. I baked longer & at 330, and had no problem with a soft center as previous reviews stated. Also drizzled the rum cream-cheese glaze from another recipe - YUM!**

Pumpkin Toffee Cheesecake

I'm rating according to my own adjustments. I tried the recipe "as written" first & changed it accordingly. went back to basic graham cracker crust, put 2/3 pkg of toffee chips INSIDE the pumpkin layer, the rest on top of the sour cream layer, omitted the caramel. I made 4 of them this Christmas season & people are still raving & asking for more!! thanks for posting the recipe!

Sweet Potato Pie I

love this pie! I used a suggestion from a previous rater, and used canned potato instead, to save me the hour on Christmas morning.. and I don't see where it effected the outcome one bit! next time I'm trying homemade crust tho, since I can't seem to find a store-bought version I'm happy with yet.
