Oh-So-Good Chicken

mom made this for dinner the other day & shared - I love it! she didn't add mushrooms, but did add a small can of the chopped green chiles, and probably extra cheese, knowing mom! I'll make it hotter with jalapenos instead of green chiles, and definitely NOT mushrooms, they don't fit with the Mexican flavors. I'll probably throw in some sliced black olive tho - that would be yummy! I think this would be good with pork instead of chicken also. mmm - making me hungry just thinking about it!

Perfect St. Patrick's Day Cake

Very good, big hit at work! I used a bundt pan, cooked it about an hour, and made my own Irish Cream/Whiskey glaze rather than a full-blown frosting - and it was yummy! Pic posted.

Pork 'n' Potato Dinner

When I first saw the recipe, my thought was "where's the garlic?" Then I read reviews speaking of blandness. The only changes I made were to NOT dredge in flour before browning the chops, reduced the oil, and I added this wonderful zesty garlic seasoning I put on everything. Oh, and I mistakenly used 1 C water & 1 T bouillon.. so I ended up with more sauce. Since I didn't flour the chops, I needed a teeny bit of corn startch to thicken my sauce - and YUMMY! Simple one pan recipe, will make it again.

huge success - everyone at work loved them! I used the cook versio of the pudding, cut 18 of the rolls in half, and added raisins.. otherwise, followed recipe. next time, I use slightly less butter - but otherwise - PERFECT!!

Slow Cooker Chicken and Dumplings

Grilled Bacon Jalapeno Wraps

my family has made these for years.. however we ALWAYS season the cream cheese filling. I use minced garlic & fresh cilantro, but the cajun version suggested sounds good too. I like them best on the grill, but there are "popper racks" you can buy for the oven, no soaking in bacon grease that way!

Brownie Frosting

I was skeptical at first, the recipe didn't "make sense" to me - but it worked perfectly. Good to heed the advice that you need to work quickly with the frosting after pouring it from the pan, it starts seting up fast! I'm not a frosting fan on brownies usually, but my co-workers RAVED - all of them! I ate a few small ones, and must admit the frosting was yummy, and not overwhelming, as it sometimes. Thanks for the recipe, I'll be using this one henceforth!

Kalua Pig in a Slow Cooker

KILLER good stuff! I was very happy to have leftovers because half my company canceled on me at the last minute! I wish mine had as much liquid as some comments refer to, though. mine wasn't dry in any definition of the word, but I wanted more juice!

Coconut (Haupia) and Chocolate Pie

this didn't thrill me, like I expected. like several other comments stated, I was looking for more of a coconut flavor than came through. the chocolate part was really good, but the coconut taste was almost non-existent. otherwise, quantities were right on, I had no issue with it setting.. and it did make for a pretty presentation. I put the white layer down first, layered with chocolate, then whipped cream.. I liked the look better than the pics with the white on top.

Green Tomato Cake

I love this recipe & can't believe I never rated it before. I usually don't tell people about the tomatoes until after they've tried it & raved! This is one of my most-requested desserts! I too cut the sugar to about 1.5 cups, and don't usually put in the raisins (only because I have too many friends who don't like them). Also - I have tried it with the cream cheese frosting & without.. I prefer without, it's just too good all on it's own! YUMMY - one is baking now & the house smells so good! I can't wait for later! **as a side note - I have since tried this in a bundt, and had good success. I baked longer & at 330, and had no problem with a soft center as previous reviews stated. Also drizzled the rum cream-cheese glaze from another recipe - YUM!**

Pumpkin Toffee Cheesecake

I'm rating according to my own adjustments. I tried the recipe "as written" first & changed it accordingly. went back to basic graham cracker crust, put 2/3 pkg of toffee chips INSIDE the pumpkin layer, the rest on top of the sour cream layer, omitted the caramel. I made 4 of them this Christmas season & people are still raving & asking for more!! thanks for posting the recipe!

Sweet Potato Pie I

love this pie! I used a suggestion from a previous rater, and used canned potato instead, to save me the hour on Christmas morning.. and I don't see where it effected the outcome one bit! next time I'm trying homemade crust tho, since I can't seem to find a store-bought version I'm happy with yet.

Candied Carrots

this was my "healthy" veggie side dish at Christmas - I just steamed the carrots in a microwave baggie, for all of 7 minutes - then tossed them in the sauce. YUMMY! love it - and so simple!

Haddock Au Gratin

my back was out yesterday and I couldn't stand in the kitchen for long. I had already taken a large chunk of haddock from the freezer .. so I printed this one up for the boyfriend to make for us. altho he said he didn't think he'd like it, he made it anyway.. he talked of how simple it was as he was cooking - and how YUMMY it was as he was eating it! we served it with brown rice cooked in veggie stock & green beans - and had an EXCELLENT dinner without much effort at all! thanks for this one, it's now in the recipe box for future reference! :)

Restaurant-Style Prime Rib Roast

** updated rating ** I used this recipe on a 20 lb roast on Christmas; the quantity of rub was sufficient, even for the large hunk of meat! the one thing I did a little differently was to cook the roast for 15 at 475 first, then down to 325 for the remainder. I was using a roasting oven, rather than traditional. cooking time was about 3 hours - and the meat was perfect - everyone raved!

Zucchini Carrot Muffins

I had really good results.. but only by using this recipe as a base idea. I didn't have the carrot cake mix I thought, so used a spice cake & used grated carrots in place of the zucchini. I also increased the applesauce by the amount of oil & omitted the oil completey. it ended up a little on the thick side, so I added about 1/4 cup water. I added cinnamon chips instead of raisins. I chose not to frost, altho if I did, I would use cream cheese frosting. instead I just sprinkled extra cinnamon chips & halloween candies on top of the muffins before baking, to make them seasonal. the muffins were a hit at the party!

Easy Roasted Pork

Cake Mix Cookies VI

I didn't have a yellow cake mix, so I used devil's food.. then found that "someone" ate the last bag of chocolate chips! SO - I used about 1.5 C of peanut butter instead, to boost the flavor... YUMMY! and so simple. thanx for the recipe, I will make these again, in various ways.
