Classic Shepherd's Pie

My family really enjoyed this one. I didn't have tomato juice so I used 8 oz. of tomato sauce and 1/4 cup of water instead. I made it in the morning and it was all ready to put in the oven for dinner. Will make this recipe again and again.

Vegan Lentil, Kale, and Red Onion Pasta

We just finished eating this for supper. Everyone enjoyed it! My only change was to add garlic to the onion/sausage mixture, decrease the oil to about 2 Tablespoons, and use turkey sausage. Will make again.

Skillet Chicken and Vegetables

I used just onions and asparagus with reduced-calorie mayo. Everyone in my family LOVED it. They kept asking "what's the sauce?"? I told them it was mayo and they didn't believe me. Next time I will add fresh garlic, mushrooms, and maybe the red bell pepper for color.

Hamburger Hash

Really good. Deserves a 5 star because it is so simple and inexpensive. I added celery, extra onion, extra garlic, 2 bay leaves, etc. Followed suggestions from others. Family loved it, and that's all that matters!

Tuna Noodle Casserole

This was SO good. I took a few suggestions from other reviewers and added a tablespoon of dijon mustard and a tablespoon of white wine to the sauce. My kids LOVED it.

Crab Crusted Grouper

I've made this recipe 3 or 4 times. I've used grouper, tilapia, and snapper. I double the topping but reduce the butter and omit the jalapeno (for the kids). It is SO good. My children love it. This is now one of my new "go to" recipes when I'm out of ideas for dinner.

Whole Wheat Muffins

I used applesauce instead of oil and added 1 tsp. cinnamon and 2/3 cup butterscotch chips. Reduced sugar to 1/4 cup. My girls loved these muffins!
