Fluffy Gluten Free Cornbread

This fluffy GF cornbread tastes just as delicious as a gluten recipe and no one will know the difference. I used Bob's Red Mill GF all purpose flour just like others suggested and it turned out great!

Light Coconut Pie

Excellent! Lower fat but it sure tasted like it was rich and delicious! Will make this again. Used pina colada Yoplait fat free yogurt and turned out so good. Also put a little of coconut extract for more coconut flavor.

Asparagus Lasagna

Pork Tenderloin in Bourbon

Delish! The pork was so moist and had great flavor with the bourbon mixture. I cooked the pork in my crockpot on high for 4 hours and it turned out perfect. I also marinated it for 3 hours. I will definitely use this recipe again!

Apple Avocado Salad with Tangerine Dressing

Very good and great taste with tangerine dressing! I used fresh clementine tangerines and fresh 1/2 lemon (all peeled), garlic and blended in food processor till liquid and added olive oil. It turned out great. I will make this salad and dressing again.

Italian Spaghetti with Ham

Delicious and great flavors of garlic and cheese with ham and spaghetti . I did add peas and a mixture of parmesan and Romano cheese and cilantro(instead of parsley). I will make this again!!

Fruity Angel Food Trifle

I changed this quite a bit to making chocolate angel food cake,using frozen raspberries(thawed) sugar free vanilla pudding mix and lite Cool Whip. I mixed 1/4 cup of Cool whip into already made pudding and used rest of Cool Whip for the layers.Everyone loved this creamy,fruity with pieces of cake dessert!!

Very delicious! My husband likes to bake breads and he made this and it was better than his grandfather's German recipe that had been used for years and years! He added dried cranberries, raisins, red and green candied cherries and slivered almonds. Drizzled the top with a sugar glaze(powdered sugar, milk and almond extract)and decorated top with red and green candied cherry halves on icing. He/I will always use this recipe every Christmas from now on! Everyone loved it. Thanks!

Old-Fashioned Scalloped Corn

Delicious! The best scalloped corn I've ever made. I used 2 cans of creamed corn and 1 can of whole corn. I made this for Christmas dinner and everyone loved it! I used crushed Ritz crackers instead of saltines and it had a more flavorful taste plus added 1/4 cup of finely chopped red onions which added more flavor too. I also added 1/4 cup parmesan cheese to the cracker crumb mixture for the topping. I will make this over and over again! Thanks for the great recipe.
