Raspberry Cream Cheese Coffee Cake

Delicious & beautiful cake! I also cut the almond extract to 1t. - perfect amount of almond-ness. I also used sliced almonds & mixed them with the crumb mixture. I heated up my "Simply Fruit" Raspberry Spread (less sweet than jam)for about 15 seconds, which made it easier to spread on as the layer on top of the cream cheese mixture. Lost the bottom to my springform pan(???) - but baked up fine in a round 10" cake pan. EXTRA NOTE: This coffee cake tastes much better when completely cooled, in my opinion, so factor in cooling time if you are making it for breakfast!

Gobble Up Granola Snacks

Yum! I have to give the original recipe only 4 stars - the amounts are a bit off. To make them 5 star, do the following: 1. ADD almost 1 cup of raisins & some good shakes of cinnamon to the cereal & oats before mixing in the goo. 2. USE some salt - maybe 1/8t., 2/3 cup of brown sugar, and 2/3 cup corn syrup(Include 2-3 T. of honey in this measurement) - 3. BOIL the mixture for not quite a minute. This seems to make the bars a bit more solid. 4. MIX in 2/3 cup of chunky peanut butter with the vanilla & mix quickly into the dry ingredients. 5. PLOP the mixture onto a large cutting board and shape them into a rectangle, pressing down to half-inch thickness before slicing. When cool, wrap these individually in Saran Wrap. NOTE: I have made these also omitting the cinnamon & adding 1/2 cup of mini M&M's. The only problem is that they melt & get crushed in the warm mix - but taste great.

Creamiest Rice Pudding

This is almost like my great-aunt's recipe. Her's uses a stick of butter cooked with the milk & uses 6 eggs and 1 cup of raisins. She cooks the rice in 2 c. boiling water for 7 minutes & adds the milk & other ingredients as written in this recipe. I'm sure I'll love it this way too, but I still think hers is the best!

Southwestern Egg Rolls

Loved these! I did microwave the corn along with a few handfuls of chopped fresh spinach & drained before adding to the filling mixture. I doubled the recipe, not doubling the jalapeno peppers because I used pepperjack cheese. They were perfectly spicy. I do recommend FRYING these. Maybe I will try the baking method too, but really - just use around 1 to 1 1/2 inches of oil in a deep pan, turning once & drain on paper towels. They aren't too oily!

Amy's Cilantro Cream Sauce

Easy & delicious as written. I halved the recipe (plenty as a dip for a double batch of Southwestern Egg Rolls) - still have some left for something else. I used my Magic Bullet to whip it up (thought that it may go to the appliance graveyard, but it turns out to be fun)!

Kung Pao Chicken

We loved this meal! I listened to other's advice and added 1 c. water & made extra sauce. I loved the taste of the sauce simmering in the pan, but it lost so much of the flavor impact because I added a bag of fresh stir-fry veggies to the chicken. Next time, I will make them on the side. Other than that, I can't wait to make it again!

Mouth-Watering Stuffed Mushrooms

These were good stuffed mushrooms. I halved the cream cheese mixture & used 2 containers of small-medium mushrooms. It was the perfect amount of filling. Not "the best", but enjoyed by my guests.

Best Ever Corn Muffins

I followed other's advice: 1/2 c. cornmeal, 1 1/4 c. baking mix, 5 T. sugar & 1 teaspoon of vanilla. The vanilla made these muffins taste weird - they really should be called "Corn Cupcakes" - not bad tasting, just not what I wanted to serve with chili! (Side note: the recipe does make 12 muffins)

White Chocolate Raspberry Cheesecake

Nice cheesecake & very lovely looking. I followed everyone's suggestions regarding the jam & water bath. I wished that I had made another crust though. I used oreo crumbs (no filling) & found it too rich/sweet.

Bill's Sausage Gravy

This is a great sausage gravy with any type of sausage. Maple tastes great & I normally wouldn't have chosen it, but have used it several times for this gravy. I end up having to use a little extra flour because I make this with 1% milk, which is what I normally buy. OH - ONE OTHER THING: The most popular review states that he whisks the milk & flour together & adds it to the sausage directly. The reason the recipe is written the way it is - is because you need to cook the flour in the drippings & butter to get rid of the "floury" taste. All successful white sauces are made this way. Following the original recipe as written makes the best tasting gravy!

Brunch Omelet Torte

I made this for dinner & it was delicious & enjoyed by the whole family. Maybe a little time-consuming, but not really. I might buy the refrigerated sliced potatoes (Simply Potatoes) next time - it would make it even easier. Can't wait to make it again, maybe for breakfast next time!

Artichoke Dip I

I used one large can of artichoke hearts packed in water. Also, I added 1/2 cup chopped green onions & saved out part of the parmesan to sprinkle on the top. This was divine!

Pumpkin Soup

I didn't add the thyme to the entire pot, just in a little dish on the side & decided to season it differently as it seemed "bland & blah". I tried ginger, cinnamon & 1/2 cup applesauce. It was different, I've had much better squash soups that were sweeter-tasting. It seems like it was still missing something, but we enjoyed the flavor, probably won't make it again...

Department Store Onion Soup

This was the best French onion soup I've made yet! An excellent quality wine (I used Santa Margarita Pinot Grigio) and Pacific Organic beef broth (without MSG) made this soup outstanding. I made a half batch (6 servings) for our family of 5 and we had plenty. I followed the recipe exactly (maybe not adding all the paprika) except for the browning sauce. I have never heard of it, but will look into it. My soup didn't miss it!

Downeast Maine Pumpkin Bread

This is always been my pumpkin bread recipe, from my mother. The only change I make to it is using 1/2 oil, 1/2 applesauce, using 2 tsp. pumpkin pie spice (plus a little more cinnamon) and I always top my bread with chopped pecans. They get toasted in the oven & make a delicious top of the bread.

French Onion Soup Gratinee

This recipe does make more than 4 servings. I don't know if it was the recipe, or the cartons of beef & chicken stock that I used (Emeril's), but it was just good. I am spoiled though, the best French onion soup is found in France! However, I would try this recipe again and try a different beef/chicken broth.
