Chicken Monterey

I improvised with this recipe - not really reading the directions - but it turned out delicious & loved the combination of ingredients! I tried Parmesan the 2nd time & prefer Monterey jack cheese.

Peanut Butter Bars I

Kids said that these are better than Reese's! Very tasty. Has anyone tried using just 1 stick of butter successfully? I'll let you know if it works! UPDATE: I made these with 1 1/2 sticks of butter with equally delicious results. I will update again trying 1 stick...UPDATE #2: Okay, I tried one stick of butter - the taste is still delicious! The only difference is that the peanut butter part is a little more crumbly...doesn't hold together quite as well...so you decide how much butter you want to use!

Slow Cooker Thanksgiving Turkey

Pretty good...We did not care for the taste of the canned "fake" gravy & would maybe someday try it again using chicken or turkey broth & use the drippings to make a traditional gravy. The turkey texture was pretty good and it was a very easy meal. I found the recipe to be accurate for the timing of the turkey.

South Georgia Biscuits

Not the best biscuit, but gets 4 stars for technique & potential. I thought they tasted good with butter & honey, but were pretty bland. I used a stick of butter instead of shortening, but otherwise followed the recipe. Next time, I will try buttermilk & see if they turn out better. NOTE: Either the bake time is too long, or the oven too hot as these would be burnt in 11 minutes.

Amish Friendship Bread I

Yum - I love this recipe because there are so many different ways to make it. ONE NOTE: If you use 1 large box of instant pudding, or 2 small ones, you will not need to add any additional sugar. It is plenty sweet. I loved having raisins in ours & can't wait to try other's ideas.

Michelle's Blonde Chicken Chili

The only adjustment I made to the recipe was reducing the crushed red pepper to 1/2 teaspoon. Perfect amount of spice for our family. This was very good and different than my traditional chili, so a nice change. I may try draining the beans next time to see if I can get a less "pasty" texture.

Turkey Loaf

Sorry, these were "spongy" and had way too many bread crumbs in them (that was the overwhelming taste) - I did not have poultry seasoning and used Italian seasoning & parmesan cheese. I don't think that would change the texture that much. Drowning in marinara sauce, they were edible...

Cream of Sweet Potato Soup

I liked this soup, it had a nice flavor and could be served with something more substantial - I don't know what though... My family loves sweet potatoes, but were NOT fans of this soup and would rate it much lower.

Pesto Torta (Layered Spread)

Five stars for an easy, impressive appetizer. I halved the recipe for a group of 6 - I did have other appetizers also, and it was plenty. I cut my cream cheese in half and shaped each square into a flat round shape. Chopped & dried my red peppers on a paper towel. On the finished product, I pressed chopped green onions around the sides. Lovely. Next time I may try seasoning the cream cheese with some garlic? Served with water crackers.

Quick Cheeseburger Pie

Sorry, I thought this was pretty horrible and with a few modifications at the end, it ended up being edible (maybe a 3 star). First off, the crust was bland & had a sour flavor. The meat filling only filled up the crust HALF way - which was maybe my fault for using a deeper pie pan. I took this out of the oven & thought it looked awful so I sauteed a package of mushrooms and added on top, still there was a lot of room left - AND I was frying hashbrowns on the stovetop as a side dish so I layered them on top. That was the only thing that saved the dish. We all picked off the crust and husband asked what possessed me to make this. I just had a craving for cheeseburgers & thought it might take care of it. It kind of did...it tasted a bit like a McDonalds cheeseburger & fries. (I don't know if that is a good thing though) So next time, I will save myself the trouble and go through the drive through!

Never Fail Chocolate Chip Cookies

After years of making the Nestle Tollhouse recipe (with a bit more flour) - I officially am switching to this recipe! Even though it is such a minor addition (the baking powder) - it adds the right amount of "puffiness". I have tried many other recipes, and this one is great! NOTE: If you are using SALTED butter, cut the salt amount back to 3/4 tsp.

Sun-Dried Tomato Basil Orzo

Very easy as a side dish. I kept in the amount of olive oil since I had dried tomatoes, not packed in oil. Also, my basil went bad before I got to use it, so I used one teaspoon of dried and added I clove of chopped garlic. Everyone in my family enjoyed this along Chicken Cordon Bleu II!

Chocolate Frosting II

Yes, this frosting was very good. It had a fudgy - thick texture that tasted delicious with chocolate cake. My only complaints was that it was so heavy that it looked "gloppy" and made my cake fall apart, and had a bit too much of a powdered sugar taste. That being said, I would make this again and experiment with the amount of milk & sugar, because it was very tasty. My cake looked awful, but everyone loved the rich taste!

Colorful Fried Rice

Microwave Caramel Popcorn

YUM! Five stars for an easy, delicious treat! I used air popped popcorn and 1 cup of Pretzel fish shaped crackers - perfect combo of sweet & salty. Also, I tossed the mix in a large Tupperware bowl with lid and microwaved it with the lid loosely on top as directed. Came out terrific!

Cuban Midnight Sandwich

This sandwich reminded our family of one of our favorite sandwiches at "Potbelly" - the "Wreck". I made one huge sandwich on a loaf of French bread and baked it openfaced in the oven until hot. I brushed the outside with a bit of olive oil first. Oh, I also added a little roast beef and used less than 1/3 cup mayo + 2-3 T. dressing. I thought it could have used some more of the mayo spread mixture, so will up it to 1/2 cup for a big French loaf. I don't care if it is truly Cuban, or not - but it is a truly great sandwich!

Pepperoni Stuffed Mushrooms

So sorry to rate this lower than the others. I made 36 mushrooms and they were slimy and mushy. The taste was okay - the texture was not what I expected. Everyone tried them and didn't have another & I tossed out the rest. Maybe I did something wrong?

Easy Pineapple Cake

This cake is super-yummy and DOESN'T need oil or butter! It has a great chewy & moist texture and there is plenty of fat in the frosting! I cut back on the sugar by 1/4 of a cup and they did not seem too sweet - just right. These are just like they say...very easy & fast to make -tasted a little like my carrot cake recipe. I sprinkled 1/2 cup chopped pecans on top of the frosting also. Thanks! UPDATE: Do keep this in the fridge if it is not eaten right away. It tastes yummy cold too!

Buffalo Chicken Dip

A popular choice at our Superbowl party! Everyone preferred eating this with celery, but next time, I would like to try Frito's scoops. I used all Blue Cheese Dressing. Also, used a pound of chicken breasts, poached & finely chopped and did not use the cheese in the dip. I sprinkled about a half a cup on top & added some chopped green onions for looks. Would like to try to make this in a lower-fat version because I could feel my thighs expanding while I ate it!
