Three Olive Spread

This is a delicious spread, for the serious olive lover...I used garlic-stuffed green olives and didn't add extra garlic cloves. I will probably make 1/2 recipe next time - it does make a lot. NOT the prettiest appetizer, so throw a few sprigs of parsley on top!

Rosemary Ranch Chicken Kabobs

We loved this chicken & marinated mushrooms & Vidalia onions also. I cut back the Worcestershire sauce to 1 T. and the sugar in half. PERFECT! Also, I didn't want to take the time for kabobs, so I sliced 6 breasts in half lengthwise, and grilled them in strips. The extra marinade was boiled stovetop & tossed with boiled red potatoes. Thanks for a great dish!

The Best Meatballs You'll Ever Have

We didn't care for the taste of these meatballs. They did not mix well with pasta sauce & were over-seasoned as written. The large amount of Worchechire (okay, I've never spelled it out) sauce made a funky taste - kinda sour. Not what I want in a meatball sandwich. Edible, not delicious - sorry...

Cinnamon Sweet Potato Chips

Yummy side dish, we all enjoyed. 4 stars for calling them "chips" when they really don't get crispy like chips. That being said, they had a great flavor and I will certainly make them again! NOTE: melt butter in a bowl, mix in sugar, salt & cinnamon - then toss the potato slices in the bowl, mixing well. ALSO, bake at 375 to keep them from burning...

Slow Cooked Corned Beef for Sandwiches

This Corned Beef had great flavor, was easy to make, but hard to slice and mostly tough. Maybe it was the cut of meat that I purchased, but if I'm going to make hot Reuben sandwiches, I will stick to buying it at the deli. We all enjoyed the meal, so I just don't know if it is worth the work/time involved...

Calico Beans

Loved these beans! Didn't find lima beans at the store, so I picked up a can of pinto. Also, I used 3/4 cup brown sugar and they were plenty sweet. I omitted the hamburger, because it seemed like too much meat making these as a side dish for BBQ ribs! Our new bean recipe - the best I've tried!

Paprika Chicken with Mushrooms

This chicken was quite bland without the addition of 1/2 cup white wine. I would also add some cream & flour next time to thicken up the sauce. Fresh garlic makes the flavor better. Also, cooking the mushrooms and onions together first, then adding them back in - makes much more sense to me.

Cheesecake Bars

I certainly would suggest doubling the filling, but not the lemon juice (thanks to the Naples girl who suggested that). Do melt 1/3 cup of seedless strawberry(or other fruit) jam and drizzle on before the added topping, then bake. It may have been too plain without the fruit addition. Loved the crunchy walnuts, but 4 stars because the crust is yummy but hard to cut & does separate from the topping after chilled. Thanks!

Turkey a la Oscar

We all enjoyed this dinner. I also steamed fresh asparagus like other reviewers. The sauce could have used some lemon juice, and I will try it again with that addition. I also tried 1/4 t. dried tarragon, which someone else suggested & enjoyed the flavor boost. This was an easy & enjoyable meal... thanks!

Chocolate Cheese Frosting

This was a good frosting paired with Dark Chocolate Cake II. A pretty, easy-to-spread texture that is almost fluffy. I had to use 5 ounces of melted Guittard dark semisweet chocolate to get it to the level of chocolaty-ness I wanted. I also omitted the cinnamon. I used less than 4 cups of powdered sugar, and maybe 2-3 T. milk. Still, I would have preferred a more fudge-like frosting.

Dark Chocolate Cake II

A perfect textured chocolate cake. I also subbed the milk & vinegar for buttermilk (like my grandma does) and the cake was perfect. Buttered & floured the pan & the cake came out like a dream. I used "Chocolate Cheese Frosting" but next time will use a fudgier-type frosting. Delicious!

Mushroom Blue Cheese Turkey Burgers

These were awesome - on the grill. Just flip once to keep them together. ANOTHER TIP: Most ground turkey comes in a 1-1/4 pound package. Scale the recipe to 5 servings to get the right ingredient amounts & mix VERY well. Then shape into 6 round balls, packing them tightly. Flatten slightly into thick disks and place gently on the hot grill. I have made these several times this way and have not had a problem. I always mix in the blue cheese. Love these more than hamburgers!

Broiled Tilapia Parmesan

This recipe is perfect as written and works deliciously with many kinds of white fish (we personally love tilapia). I highly recommend the aluminum foil - easy cleanup! We could eat this fish weekly!

Bacon for the Family or a Crowd

Love this! I will never make bacon any other way again! I used regular bacon (not thick sliced) and a 400 degree oven. It took a little longer than I thought, and I turned half-way thru. I like mine extra-crispy though!

Lasagna Alfredo Roll Ups

I used 1/2 pound of finely diced chicken & added 3 cloves of garlic to the cheese mixture. This was a good meal that everyone enjoyed, just not enough flavor to make it 5 star. I thought it was a fun & different meal, so I will try it again adding additional ingredients for more flavor. ALSO, I used one jar of Alfredo sauce (a smaller amount than listed in the recipe)and it was plenty.
