Oma's Rhubarb Cake

This good, simple cake is best eaten the day it's made. I added a teaspoon of vanilla to the cake, but otherwise made as written. Changes I'll try next time: up the rhubarb to 4 cups, add a bit of cinnamon to batter, cut the topping in half (using brown sugar), and adding chopped walnuts to topping. Worth another try!

Easy Slow Cooker French Dip

I prefer my recipe that has a can of beef consumme instead of the beer. I didn't like the flavor of the beer in this. Love French dips though!

Portuguese Custard Tarts - Pasteis de Nata

I don't think I've ever rated anything one star before. Really, a failure all around. I used my stoneware muffin pan, cut the rounds of dough & rolled them out 1. the dough never cooked on the bottom, resulting in a doughy blob. 2. We salvaged the custard and it is just okay. Way too sweet, strange texture, too eggy, bland flavor. Would have preferred a pudding-like consistency. Won't make again and I love sweets & pastries!

Sweet Potato Oranges

Used more sweet potatoes, half sugar, more butter (oops, didn't read the instructions first), less rind, less topping. So delicious and pretty! Will make it a Christmas tradition.

Brazilian Fish Stew

Delicious AS WRITTEN! Love the mild flavor of the tilapia and added four fillets whole and they broke up into nice chunks on their own. Also, used a half of a large yellow onion and a bag of Trader Joe's frozen diced mixed peppers (yellow, red & green)! Wish I had leftovers!

Slow Cooker Chicken and Dumplings

No butter needed, one can Cream of Mushroom, one can Cream of Chicken - 1 can chicken broth, 1/2 onion, pepper, and garlic powder. Used one tube of biscuit dough...an easy & simple meal.

Baked Coconut Shrimp

These were very very good - would have loved for the topping to stay on a little better, I sprayed my pan well, but they still stuck a bit. Don't be afraid of the amount of cayenne pepper, it is very subtle. Used 30 count shrimp - will use larger ones next time just for faster prep. - loved the suggestion of the dip: 1/2 cup orange marmalade, 2-3 tsp. dijon mustard with horseradish, and a dash of salt!

Chicken Wild Rice Soup

Sauteed the veggies with a clove of garlic in a bit of olive oil before adding to the soup. Used 6 cups of chicken broth and added 1/2 cup of half & half for a bit of creaminess! Yummy!

Garden Tomato Salsa

Make sure to add 1/2 tsp. salt to the tomatoes first, allowing them to sit a half an hour, then drain well. This helps release some of the excess juices. Great salsa recipe - I omitted the lime juice because I didn't have a lime, added 2 small cloves of garlic, and a fresh jalapeno pepper.

Raspberry Almond Coffeecake

Nice coffee cake - 4 stars for a recipe that needs a little adjusting - needs 1 1/2 amount of batter, swap white sugar (original amount) for the brown (the brown sugar gives the berries a funny taste), and almond extract for the glaze (use original measurements). Very good, nothing amazing, but easy & will probably make again.

Taco Seasoning I

Easy, tasty and so glad to find it when I was out of my packets! Subbed 1/8 tsp. ground cayenne pepper for the flakes & used 1/2 tsp. kosher salt. I used a bit over half the original amount in a pound of ground beef mixed with black beans and added 1/2 cup of water with a tsp or so of flour mixed into it. Will make more next time!

Best of the Best Blueberry Muffins

Very good - Can't quite give it 5 stars, as I'm looking for the very best of the best Blueberry Muffin recipe to give that to. I agree with 'nonsuchbaker' - these muffins are a bit too flat on top. Sprinkle a bit of cinnamon on top with the sugar.

Strawberry Bread

Very good! I agree with most of the reviewers, it does need double the strawberries. OR, half strawberries/half fresh raspberries or rhubarb would make this a 5 star recipe. Sprinkle a little sugar on top before baking and have a crust with a bit of sweet crunch!

Mushroom Orzo

Loved this quick and delicious side - we love mushrooms - so I probably used closer to 1 cup. Also, I didn't have any pearl onions on hand, just used 1/3 cup or so of a sweet yellow onion. Easy & impressive taste - thanks Babarclay!
