Artichoke Chicken

A confusing meal. Artichoke dip atop chicken breasts - we wanted to eat it with crackers. It tasted fine, no one in our family would want me to make it again though. The chicken took a long time to cook through. I used 1/2 mayo and 1/2 sour cream as recommended by others. An interesting idea, just not our style.

Chicken Cordon Bleu II

Delicious! My whole family loved this recipe! I cut back on the butter to 4 T. and doubled the sauce, as suggested. I did not increase the wine amount though. Instead of cream, I used 1 c. half & half and used 3/4 c. of 1% milk. I just couldn't bring myself to use all cream. It was delicious & would even try using more milk/less cream next time.

Cream of Cauliflower Soup I

Sorry, I tried to love this soup. I actually would give it 3.5 stars - 4 is pushing it - My children (13, 12, & 9) did not like it as much and rated it between 2.5-3. I will only rate something 5 star that the whole family loves & that I would make again. I did use just 1/2 c. milk + 1/2 c. half & half, half of an onion & half of the swiss cheese. I did not puree it, but mashed it in the pot for added texture (a little too much texture). It had too much wine in it, maybe too sophisticated of a flavor for my kids. If you are going to try this, consider pureeing half of the soup and using 1/4 c. wine for a more family-friendly soup.

Chicken Chimichangas with Green Sauce

The whole family loved these! A very easy & satisfying dinner. I served them over shredded lettuce & one chimichanga was plenty for each person. I used a cold rotisserie chicken - This is a new family favorite!

Baked Potato Soup V

This was a delicious soup - loved by the whole family! I used a package of pre-cooked Hormel bacon, threw in all of the cheese & most of the onions, and used 1% milk. It made a huge amount for our family of 5 - I will make it again soon!

Justin's Hoosier Daddy Chili

Good chili - I am one that likes a thicker chili & would recommend using less chicken broth. Also, I used less than 2 T. chili powder & no red pepper flakes, but 1/2 t. cayenne pepper which made it way too spicy for our family. It had good flavor, and I will try it again with modifications - I only gave it 4 stars - still very good, but not knock-your-socks-off good!

Slow-Cooker Chicken Tortilla Soup

This was a very good soup. Sliced avocado & cheddar shreds were delicious on top along with some crushed tortilla strips. Next time, I will make a few changes: Use more chicken, add black beans, all chicken broth instead of water. I may even rev up the spices next time.

Chili Rellenos Casserole

I took everyone's suggestions: 3 eggs, enchilada sauce, 1 lb. ground beef seasoned with cumin. It was good. Definatly needed the beef. My family liked it too - not outstanding or something to get too excited about, but worth trying for something different.

Blueberry Coffee Cake I

I always love to "tweak" recipes to make them my own...however, I made this exactly as written & it was the most delicious coffee cake I've ever had! Leave the blueberry layer in the middle & go for the whole amount of streusel topping - delicious! My only modification was the baking time - my oven only needed 50 minutes, so don't overbake it.
