Eggplant Croquettes

Pretty good, At first I followed the recipe exactly and found it to be a little bland and needing a bit more texture. So to the mixture I added 3 mini-bella mushrooms chopped, about a tablespoon of fresh basil and half tablespoon of fresh oregano and it brightened up wonderfully. Really an excellent base recipe that can be adjusted to one's taste.

Eggless Chocolate Cake II

Good recipe. I decided to make this b/c my 4 yr old wanted chocolate cupcakes and I didn't have any eggs. I did decide to change the recipe a bit after reading the reviews. First I halved the recipe so there were only 12 servings. Then I doubled the cocoa powder and vanilla. Also since I love chocolate orange I replaced the water with orange juice, added a tsp of orange extract and the zest of one orange. Overall a good recipe to start with and tinker with. The texture was dense but nice which may have been because I doubled the cocoa.

Sugar Cookie Icing

Nice to work with and looks great. Extremely sweet though. I add about 1/8 of a tsp of salt to balance out the flavor a bit.

Pumpkin Cream Cheese Muffins

These are good but not my favorite pumpkin muffin/bread recipe. My favorite is still the Downeast Maine Pumpkin Bread, it just has really great pumpkin flavor. I do like the cream cheese filling idea though. I made 4 muffins and a loaf of bread with this recipe. I "filled" the muffins as the recipe said, but for the bread I ladeled in to about 1/3 the loaf pan. Then took a spoon and smoothed a "long ditch" down the center of the batter. Spooned in the cream cheese filling, then spooned in batter on the sides of the cream cheese filling to create walls to hold the filling in. Then I ladeled the batter over the top and added the crumb topping. It turned out very pretty when sliced. I will be posting a picture soon. Next time I make pumpkin bread I will be going back to the Downeast recipe and maybe I'll fill it with the cream cheese filling from this one!

Chicken Marsala

Fantastic! Better than what some resteraunts have tried to pass off as chicken marsala. I have mad this recipe twice now. First as written and second with additions. My family and I really like th taste the spices so we upped the oregano to 1 tsp and added 1/2 tsp of dried thyme to the flour. Then before adding the mushrooms I addeed 1 clove of garlic. Once the wine and sherry and wine were added I let them cook a minute to blend the flavors. Finally I too a 1/2 cup chicken stock with about 2/3 of a tablespoon measure mixed in and added to the sauce. It thinckened nicely, and it was all fantastic over noodles.

Very good cookie. I did make one minor alteration, and added about 1/4 tsp of salt to help bring up the flavors and balance out the confectioners sugar. This cookie has great texture too. Slightly crisp on the edges and soft in the middle. What a sugar cookie should be!

Syracuse Salt Potatoes

Soo glad I found this recipe. We used to have these at clambakes every year growing up. I'm originally from WNY right on lake ontario. I moved out to the midwest and nobody here new what I was talking about. But this recipe is just what I remeber as a kid! Add a chopped parsely oy chives to the butter for a little extra kick!

Best Chocolate Chip Cookies

Great simple recipe for kids to help with. My 5yr old loves to help add ingrediants and stir. This recipe tastes great, and makes a really pretty cookie. I do add a touch more vanilla but mostly because we really like vanilla. Not that these cookies need it. Yummy, simple, and looks as good as they taste, what more could you ask of a cookie?

Cranberry Sauce I

So simple but delicious. My 5 year old "made" the craberry sauce with my help this year for Thanksgiving using this recipe. This is the best recipe, and so basic it would be easy to dress it up how ever you'd want. We added 1/4 tsp cinnamon as well. This sauce is also delicious cold used as a jelly on toast.

These are very good, we just prefer a more buttery flavor so we go with halving the 1/3 c of (butter flavored) shortening, and using butter for the other half. With that minor change these turn out fabulous!

Sugar Cookie Frosting

This is the best basic cookie frosting. Just change out extracts for different flavors (starting at 1/2 tsp to taste)and add your food coloring. Great for decorating, the frosting set up nicely after a few hours, SLOWLY add more milk if it is too thick to get the consistency you want. Just remeber this is not a glaze it is a frosting!*** Just a quick update I use this recipe but now only do about half the confectioners sugar. Not to sweet just enough to compliment the cookie with out the frosting being the only thing you taste. I first cream my shortening (smart balance is transfat free) then add the sugar. when It turns crumbly I slowly add the milk to the consistency I am looking for.

Herb and Garlic Cheese Spread

It was alright, but not something I would make again. The texture seemed to gritty to me from all of the spices and the flavor was only mediocre. I did follow the instruction exactly the first time, and then thought if I tinkered with it maybe something could come of it. In the end it's the texture from the amounts of dry seasoning that I don't like. Personally I've since found others that work better.

Ricardo's Pizza Crust

My favorite pizza dough recipe. Easy to adjust spices to taste. And if you replace 1/4 cup of the flour with white corn meal it gives the crust a bit more crispness. My families favorite addition to the dough is sliced garlic cloves (2-3 cloves is plenty garlickey with out being overwhelming).
