Chicken Tikka Masala

This was my first attempt at anything like this, but it came out great. I did, however, follow other reviews and only added one tsp. salt total and cut down on the cayenne, since I have a 5 year old. My husband, who had grown up with nothing more exotic than tacos, absolutely loved it. By the way, the first time I made it, I only had crystallized ginger, and it worked just fine.

Tomato Cucumber Salad

This was delicious! I used halved cherry tomatoes and about 1/4 of an onion, thinly sliced. I also added Penzey's italian seasoning. Very refreshing, and a great way to use up extra cucumbers!

Skillet Chicken and Vegetables

I loved this recipe - so quick and easy, with lots of great flavor. The sauce ended up very thin, because there was an awful lot of liquid in the pan from the chicken and vegetables. I will probably drain this next time. Otherwise a great recipe for a quick dinner.

Chunky Cheesecake Brownies

I made these at 10 pm one night and had them all mixed up and baked in under an hour. Not too much trouble for great brownies, I'd say. Just loved these. I took them to a superbowl get together and everyone was really glad I had made two pans! I followed the recipe to the "t" on these, except for melting the chocolate chips and butter in the microwave. One thing I might do is decrease the amount of choc. chips in the cheesecake part, as that was a little overpowered, but no complaints from anyone.

Pumpkin Rolls II

I am not a bread maker. I am nervous about making anything with yeast, but I just had to try these. I'm so glad I did - they'll be on our Thanksgiving table for sure this year! So easy and tasty - they don't even need butter. By the way, I used two 1/4 oz packages of yeast and it worked out just fine. Thanks so much for sharing!!!

Dixie Pork Chops

This is one of my new favorites. I forgot to put in the sage and I'm not a fan of raisins, so I used dried cranberries instead. It was fantastic. The chops I used were thinner, so I took them out of the oven when done and finished the sauce on the stove. It was even better the next day!

Home Made Mayonnaise

I've never tried homemade mayo before, but this was a snap. I added a bit more lemon juice and only used 1/4 tsp minced garlic. It was perfect. It is key to stream the oil in slowly while blending/processing to allow it to emulsify. So easy, I may never buy mayo again!

Crunchy Floret Salad

Very nice version of the old classic. I prefer a little less cheese, just a cup or so. As noted, it is best when prepared the night before, but great right away as well. The dressing is simple and delicious. A big hit for my family!

Trinidad Stewed Chicken

Very good. I added the whole can of coconut milk and no water; everything else I did per the recipe. I thought the level of sweetness was just right and my husband loved it. It was especially tasty over white rice with black beans on the side. Thanks!

Mrs. Sigg's Snickerdoodles

YUM! The best recipe I have found for Snickerdoodles. I used all butter and they came out a little flat, but so what. There is a lot of discussion over the "perfect" baking time, but that has to do with your oven. Just make sure they are completely baked or you may get a weird aftertaste from the cream of tartar. Thanks for a new favorite!

Chicken Tortilla Soup III

Probably the best soup recipe I have - and on heavy rotation at my house! I sub my own taco seasoning for the fajita seasoning and use 2 cups half and half, 2 cups milk. Every time I've made it, I get raves and requests for the recipe.

The Best Lemon Bars

I loved these lemon bars. They are really easy and very tasty just as the recipe is written. I used 6 TBSP. of lemon juice, which was what the bottle said to use for 2 regular sized lemons. Only four stars, though, since you have to refrigerate them and eat them cold or they get really gooey.

Kelly's Chicken and Ziti

A perfect summertime recipe. I loved this - so did my husband and 2 year old. I cut up some chicken we had marinated and grilled, which really made it special. I left out the rosemary because I'm not a big fan, but it really didn't need it. Make sure to use fresh broccoli and home grown tomatoes if you can find them (or grow them, like I do). The only seasoning this needed was a little salt and freshly ground pepper. Really fresh tasting and delicious!

Sherry Apple Pork Chops

We really liked this. I eyeballed everything and used cream sherry - not sure if it's the same thing, but it was pretty tasty. I think I would have preferred a thicker sauce, but the apples and juice were good over potatoes. Thanks!

German Potato Pancakes

Fantastic! Just like my German grandma used to make. I never knew how easy they were! I made them for my husband for fathers' day and he said they were just like he remembered from his childhood. My 2 year old gobbled them up as well. I used red potatoes and topped them with applesauce. Yum! Regarding the reviewer who said they were an ugly green color - there isn't anything green in the recipe, so unless you were using really bad potatoes or something, you must have done something really wrong. These are great!

Rempel Family Meatloaf

Thanks for a great recipe. I subbed in water crackers for the ritz, which I didn't have, but it was still great. Wondering if maybe one could just substitute in dried onion for the soup mix and avoid wasting a package? I poured out the grease from the side of the pan before serving, which made it a lot easier to slice (and more appetizing, too). Loved how quick and easy it was!

Apple-Cheddar Tossed Salad

The salad part was very good, but my husband and I agreed that the dressing was too thick and overpowering. I even made it twice, thinking I had done something wrong. Unfortunately, I didn't think it did anything to enhance the ingrediants in the salad itself.

Delicious Easy Chicken Francese

My husband and I both loved this dish. I used 2 tsp of cornstarch (mixed with cold water) to thicken and bottled lemon juice plus sea salt and plenty of ground black pepper in the flour and egg mixtures. Otherwise, I followed the recipe exactly. I loved the coating and the sauce was very lemony and delicious over rice. I'll add this one to my list of quick easy dinners!

Apricot Chicken II

Great! I added a bit of sea salt and a good amount of ground black pepper. The pepper was a wonderful contrast to the apricot. I used apple cider vinegar and regular apricot jam and cooked chunks of chicken in a skillet with the sauce. I didn't have enough time to bake it, but will try it that way next time. Thanks for a great, easy recipe!
