About this Cook
Married with a 2 year old daughter. Former bank analyst, now a stay-at-home mom and busy pastor's wife.
My favorite things to cook
Pizza, soups and salads. I try to keep it healthy, but don't always succeed!
My favorite family cooking traditions
Every year, our church ladies get together and bake cookies for our shut-ins (those who are older or disabled and can't always get to church). It's a whole day of doing what I love!
My cooking triumphs
I cooked an entire diabetic-friendly Christmas feast for my husband's co-workers, since one was diabetic. It was really tasty and no one knew how healthy it really was. Too bad that particular co-worker didn't show up!
My cooking tragedies
I decided one Christmas to make a stuffed pork loin for dinner. We were having company over and wanted something impressive. I had done one the year before for another dinner and tried the same thing. Unfortunately, I was out of kitchen twine and could only find black yarn. I figured that would work. When the roast came out of the oven it had this terrible blue ink all over it from the yarn. It was so gross I couldn't show it to my guests. We had to improvise for the main dish!

Chicken Tikka Masala
This was my first attempt at anything like this, but it came out great. I did, however, follow other reviews and only added one tsp. salt total and cut down on the cayenne, since I have a 5 year old. My husband, who had grown up with nothing more exotic than tacos, absolutely loved it. By the way, the first time I made it, I only had crystallized ginger, and it worked just fine.

Tomato Cucumber Salad
This was delicious! I used halved cherry tomatoes and about 1/4 of an onion, thinly sliced. I also added Penzey's italian seasoning. Very refreshing, and a great way to use up extra cucumbers!

Chunky Cheesecake Brownies
I made these at 10 pm one night and had them all mixed up and baked in under an hour. Not too much trouble for great brownies, I'd say. Just loved these. I took them to a superbowl get together and everyone was really glad I had made two pans! I followed the recipe to the "t" on these, except for melting the chocolate chips and butter in the microwave. One thing I might do is decrease the amount of choc. chips in the cheesecake part, as that was a little overpowered, but no complaints from anyone.
