Favorite Old Fashioned Gingerbread

I baked this to take to the preschool when we were learning about the letter G and gingerbread was our theme. Most of the 3-year olds liked it to my surprise, since most kids don't like things that are heavily spiced. The other teachers raved about this bread and wanted the recipe. I made it twice and it actually turned out better the second time. The first time I used 1 12 teaspoons ginger based on some of the other revies, and I thought it was a little too gingery. The second time I used spiced exactly as called for and I liked it much better. I also used a 9x13-inch pan the second time because I thought the bread was too "thick" the first time and was rather messy and crumbly. Using the larger pan, it only took about 35 minutes in my oven and it was still plenty thick, but more manageable as finger-food. I thought it was good and I am not a huge fan of gingerbread, gingersnaps or anything with molasses in it. I would definitely make this again and I am considering making this in mini-loaves for Christmas gifts in addition to pumpkin bread.

Chicken Pot Pie Soup

Yummy soup! I made with the amount of milk called for and the consistency was perfect, especially after adding crumbled Ritz crackers at serving time. Very quick and easy! I would imagine that baked, crumbled pie crust would be tasty too. I will definitely make again. Thanks for sharing this recipe!

Downeast Maine Pumpkin Bread

Very tasty and very easy. I am planning on giving mini-loaves of these to friends for Christmas presents. The bread does improve with age as others have said. We loved it!

Salmon Patties I

Like other reviewers, I thought this was an excellent base recipe. I bought smaller cans of salmon, so I would not have to deal with bones or skin (gross!). I tweaked the recipe based on a couple of suggestions from other reviewers: I used saltine cracker crumbs in place of bread crumbs. I add a little milk to hold the mixture together better (and didn't get all the liquid out of the can, while draining). I added onion powder, instead of onions; Old Bay Seasoning and some dill. I would like to try it again adding the Dijon mustard. I wanted to do that and simply forgot until after I made the patties. They tasted great! My only complaint was that my house is a little stinky after making these. Will definitely make again.

Chicken Enchilada Dip

I was going to make this as an appetizer on Christmas Eve (to go with chili), but was invited to a pre-Christmas party where everyone had to bring an appetizer, so decided to take it there first. I came home with an empty dish. Everyone at the party RAVED about it. I made it again for Christmas Eve as planned and again had no leftovers. My family gobbled it up. It is really good! The only change I made is that I did not add the jalepeno pepper, because I was afraid it would be too spicy. It was fabulous! Definitely a keeper. Thanks!

Roasted Lemon Herb Chicken

This was very good. We peeled the skin off because to be a little healthier, but the meat underneath was very moist and flavorful. I think the next time I make it, I may try it with only 1 tablespoon or less of olive oil (it seemed a little greasy to me when handling. I must have had a larger bird, because mine took longer than 45 minutes to cook all the way through. Otherwise, I would not hesitate to make this again.

Very Good! I used ground turkey and turkey sausage to lighten up, but it was still very tasty. I let mine cook all day in the crock pot (on low) and it was great!

Judy's Strawberry Pretzel Salad

I made this to go with Christmas dinner this year and it was a HUGE hit. Everyone loved it. I think it can easily serve more than 8. I had 11 for dinner and we had leftovers. It is really good and could also be served as a dessert (as several people commented when they ate it). Thanks!

Smoked Sausage Scramble

We loved this in our family. I made it exactly as the recipe calls for except I used butter in place of oil because I happened to be out of oil. My daughter didn't even complain about the spinach. Will definitely make again. Thank you!
