Baked Sweet Potatoes with Ginger and Honey

These were really good. I cut the recipe in half because there were only three of us. I used extra light olive oil and ground ginger because that is what I had on hand. I thought these were very tasty.

Blue Cheese and Walnut Wafers

Not a bad recipe, just average in my book. The wafers came out a bit dry for my taste. Took them to a party and they were barely touched. Probably would not make again.

Mary's Roasted Red Pepper Dip

On a scale of 1-5 I would rate this dip about a 7! It is so good. Made it tonight for a party and my guests all raved about it. I had very little left and there were only about 10 people here. It was so easy too. Served with blue tortilla chips and it was by far the most popular dish on the table. I will definitely make again. Thanks for sharing your recipe.

Creamy Dill Cucumber Toasties

I made these tonight for a party. I used cocktail pumpernickel and toasted it lightly before topping it. I DO not usually like cumcumbers and I thought this recipe was AWESOME!! I loved the flavors. Thanks for sharing.

I found this to be a little disappointing, but I cannot put my finger on why. I made this for a party and no one raved about it and I had more than half left over. I thought it was just okay...not great. Probably would not make again.

BBQ Chicken Pizza I

We were disappointed with this recipe. I left out the the molasses and we still felt it was too sweet. Also, the flavor of the cilantro and bbq sauce were a bit overpowering. I am glad I tried it, but I don't think I would make this again.

Honey Garlic Ribs

These ribs were very tasty. I boiled my ribs for about an hour prior to proceeding with the recipe, for that "fall off the bone" tenderness. I did, however ruin a cookie sheet making these ribs. I lined the sheet with foil as instructed and the sauce leaked through and the foil basically cooked to the pan. So it was impossible to remove. Once it cooled, the remaining sauce was like a thick hardened candy coating on the cookie sheet that I couldn't get clean. I would highly recommend this recipe, BUT use a disposable aluminum tray/cookie sheet.

Roasted Lemon Herb Chicken

This was very good. We peeled the skin off because to be a little healthier, but the meat underneath was very moist and flavorful. I think the next time I make it, I may try it with only 1 tablespoon or less of olive oil (it seemed a little greasy to me when handling. I must have had a larger bird, because mine took longer than 45 minutes to cook all the way through. Otherwise, I would not hesitate to make this again.

Chicken Enchilada Dip

I was going to make this as an appetizer on Christmas Eve (to go with chili), but was invited to a pre-Christmas party where everyone had to bring an appetizer, so decided to take it there first. I came home with an empty dish. Everyone at the party RAVED about it. I made it again for Christmas Eve as planned and again had no leftovers. My family gobbled it up. It is really good! The only change I made is that I did not add the jalepeno pepper, because I was afraid it would be too spicy. It was fabulous! Definitely a keeper. Thanks!

Judy's Strawberry Pretzel Salad

I made this to go with Christmas dinner this year and it was a HUGE hit. Everyone loved it. I think it can easily serve more than 8. I had 11 for dinner and we had leftovers. It is really good and could also be served as a dessert (as several people commented when they ate it). Thanks!

Slow Cooker Italian Beef for Sandwiches

This made my home smell soooo good while cooking, so my expectations were very high. Unfortunately I was disappointed with this recipe as I found the meat to be rather bland (although it was very tender. I think I will whip up a batch of my barbeque sauce and use the meat for BBQ sandwiches instead of eating as is.

Carrot Cake

I made this recipe as cupcakes for a fellow teacher at the preschool where I work. I made them this way so our class could easily celebrate her birthday. She raved about them and wanted the recipe. Even the 3-year olds LOVED these cupcakes! One even said...you are the best cooker ever! This is probably the best carrot cake I have ever had. I would not make them as cupcakes again, only because they do not rise enough even when filling the cups all the way, so they look a little scimpy for cupcakes (although they were still quite adequate as a serving). But they tasted so good, I will definitely add this to my permanant collection and make again and again (in a regular cake pan). Frosting was fantastic!

Favorite Old Fashioned Gingerbread

I baked this to take to the preschool when we were learning about the letter G and gingerbread was our theme. Most of the 3-year olds liked it to my surprise, since most kids don't like things that are heavily spiced. The other teachers raved about this bread and wanted the recipe. I made it twice and it actually turned out better the second time. The first time I used 1 12 teaspoons ginger based on some of the other revies, and I thought it was a little too gingery. The second time I used spiced exactly as called for and I liked it much better. I also used a 9x13-inch pan the second time because I thought the bread was too "thick" the first time and was rather messy and crumbly. Using the larger pan, it only took about 35 minutes in my oven and it was still plenty thick, but more manageable as finger-food. I thought it was good and I am not a huge fan of gingerbread, gingersnaps or anything with molasses in it. I would definitely make this again and I am considering making this in mini-loaves for Christmas gifts in addition to pumpkin bread.
