Asparagus-Stuffed Potatoes

Made this yesterday for Easter dinner and was a huge hit! Here are the changes I made: I don't tend to measure much of anything, but definitely increased the sour cream and milk and added some butter to the filling to make sure it wouldn't come out dry. Skipped the bacon since my mom is a vegetarian. Used brie instead of cheddar and the flavors were amazing. Will definitely make again.

Pesto Tuna Salad with Sun-Dried Tomatoes

Mmmm! Took some others suggestions and added some minced garlic and cut back a little on the pesto. Put it on toast and sprinkled on some mozzarella cheese and microwaved for 30 secs. Delicious! Definitely added some great flavors to a simple tuna melt!

Baby Carrots with Dill Butter

SO easy to make and the flavors are not overwhelmingly. It's a perfect side dish. May need a little extra flavor if you want it to kick.

Tarragon Chicken Casserole

After reading some of the reviews, I made this recipe more as a sauce for chicken and pasta, and not as a casserole. The sauce tasted wonderful, but needed to be a little thicker.

Best Big, Fat, Chewy Chocolate Chip Cookie

These cookies are really really good, but I only give them 4 stars because they are not the best. But the recipe is definitely a keeper until I find something better. My cookies came out very chewy and fat.

Honey Mustard Grilled Chicken

The sauce was AWESOME, however I give the recipe 4 stars because the chicken didn't seem to cook as well as I had hoped. I will definitely use this recipe again, and will save some of the leftover sauce for dipping.

Walter's Chicken and Mac

I tried this last night, and was pretty happy with the results. I didn't have all the exact ingredients on hand so I had to make some substitutions, and I took some tips from previous reviews. Here's what I changed: no milk, so I used half-n-half (75%) and water (25%) as a substitute; no cream of chicken, so I used cream of mushroom and didn't add any extra mushrooms; I boiled the chicken with diced celery, onion, pepper, and adobo; I added a couple slices of american cheese on the top in addition to the chedder mixed in. I cooked the dish for approximately 35 minutes, stirring midway. I really liked the flavor, and will probably add more cheese next time.

Five-Veggie Stir-Fry

Very easy to put together, however I wasn't too impressed by the flavor. In my opinion, it doesn't taste like a Chinese dish or traditional stir fry. Oh well.

Delicious Ham and Potato Soup

I've made this a couple times now, and I always love it! The best part is that you can substitute the veggies for whatever you have on hand. I did find though, that I usually have to add more flour than the recipe calls for, because I like the soup thick.

Strawberry Trifle

This was SO good! I used chocolate pudding instead of vanilla, skipped using the bananas and strawberries and used frozen blueberries, raspberries and blackberries instead. Very easy, and very yummy!

EAGLE BRAND® Pina Colada Cheesecake

I've never made cheesecake from scratch until now, and it was surprisingly easy! It turned out great, and everyone was giving compliments. I skipped the maraschino cherries, and just used orange slices, mandarin oranges, and pineapple slices. Would make this again.

Crab and Shrimp Delight

I followed the recipe pretty closely, except I didn't add the french onions, and I used less shredded cheese on top. I also substituted elbow macaroni noodles for the angel hair pasta. The end result was pretty good, but the flavor wasn't extraordinary. I'm going to make it again, however next time I'm going to try cream cheese instead of the mayo (which you can taste, and I didn't like that) and I recommend using spices like Old Bay to make it more flavorful.

Scrumptious Salisbury Steak in Mushroom Gravy

I cut the milk down to two cup and used only one can of mushrooms and the sauce still wouldn't thicken, so I wound up adding more flour. My husbands likes mushrooms, but said there where too many for this sauce. Next time I will cut back on the mushrooms and maybe add something else. I will definitely use this recipe again.
