Eggplant Supper Soup

Both my husband and I thought this soup was fantastic. Only change we made was we didn't drain the diced tomatoes and used 1/2 the salt.

Reuben Dip

As a Reuben lover I thought this was really good. I made using all reduced-fat versions of the ingredients. I served with mini-rye but it gets messy because the bread is soft. Next time I might try toasting the bread first or using some kind of cracker.

Chili Bean Dip

Everyone devoured the dip. Only change I made was I heated in a pie plate in the oven stirring a few times so I didn't have to keep watching it during the party. I garnished with sliced scallions.

Baked Omelet Pie

I needed a dairy free option for a brunch guest with health concerns so I made this leaving off the cheese. This was one of the few baked egg dishes that didn't call for milk. It was good but it took forever to cook and I had to finish it off in the microwave since everything else was done.

Rhubarb Coffee Cake

My fiance and I thought this cake was VERY GOOD! I made a few changes to make it a little healthier and I would do the same next time. 1/4 c shortening + 1/4 c unsweetened applesauce instead of 1/2 c shortening - 1/4 c egg beaters instead of 1 egg - 1 c white flour + 1 c whole wheat flour instead of 2 c white flour - used reduced-fat sour cream

Buffalo Chicken Dip

I made this dip for a party and everyone devoured it. I baked a couple chicken breasts and used that instead of canned chicken. I softened the cream cheese and mixed everything in a pyrex dish and left cold until party time. Then I baked it in the oven at 375 until hot stirring a few times. It was easier to travel with cold.

Cream Cheese Sugar Cookies

I'm not a big sugar cookie fan but I really liked this recipe. I used 1 stick of butter instead of 2 to cut down on fat and they turned out really good. I will make again.

Applesauce

I love cinnamon so I added a lot extra (1 tsp.) I only used 1/8 cup sugar since I tasted it and it didn't need anymore. I like my applesauce chunky so I thought this recipe is great. I will make again and again.
