Skillet Chicken Cordon Bleu

very easy! made this modified - didn't pound chicken breasts, just created a split large ones and stuffed with rolled up ham/ cheese. used white wine instead of grape juice, and sauteed in veg oil instead of butter. (by habit; will try in butter next time.) was good, but cooked chicken for about 30+ mins to make sure it was done. would be good over rice & mushrooms made sauce with leftover oil/chicken juice + chicken broth + wine. although i stuffed the chicken breasts, i think that it would look more impressive if you made this as directed in the recipe.

Striped Pesto Dip

I served this as an appetizer for Christmas Eve and it was a big hit! Instead of serving it in a trifle bowl, I served it in individual glass bowls (still layered) along with toasted french bread.

Strawberry, Kiwi, and Spinach Salad

This is phenomenal! I made this for a dinner party and everyone raved. I used store-bought raspberry-walnut vinegarette dressing instead of making the dressing, and also used almonds instead of walnuts. You can make this a few hours ahead of time, but add the dressing just before serving. It is sweet and tastes as delicious as it looks! Even the men at the party who didn't consider themselves "salad eaters" raved and went back for seconds.

Eggplant Parmesan II

This was great - I made it the day before as several other people had commented it was better the next day. All I had to do was heat it up. I used jar sauce, but I don't think it made much of a difference. Not difficult to do, but 3/4 of an eggplant was more than enough for two people. Additionally, I also cooked it on 10 mins each side at about 375 - 400 instead of 5 mins.

Fruit and Vegetable Pork

This was great and easy, will definately make it again. Didn't change a thing. However, I had very large pork chops (better for stuffing) and I would recommend making this recipe with thinner pork chops.

Blueberry Lemon Bread

This is very good and tasty, but really sweet! I will make this again, but will use less sugar (Maybe 3/4c or 1/2 c instead of a cup). Also, I doubled the blueberries (to 2 cups and make sure to flour them first). I used frozen blueberries and it was fine. Added 1 tsp poppy seeds. Lastly, middle seemed soggy for regular sized loaf pan - maybe decrease temp to 325 and cook for 90 mins (?) When making muffins, cook at 350 degrees for about an hour. Made this for mother's day and everyone loved it - am eager to try it again with the alteration in sugar amount.

Yummy Sweet Potato Casserole

made this for thanksgiving. As others had suggested, I cubed and then roasted the sweet potatoes first (at 325 - 350 for about 45 mins to 1 hour). Then I mashed them with the other ingredients. I also left the skin on, and added 1 tsp each of cinnamon and nutmeg. As per the suggestion of others, I halved the white sugar. Lastly, I used about 4 1/2 to 5 cups of sweet potatoes instead of 4 cups. Would definitely make again, particularly for holidays! My mother raved!

This recipe was so good, even my mom asked for it! Made it twice, once with layers and once without, didn't notice any difference. If anything, it was easier to make without layers and tasted just as good.

Rosemary Marinated Lamb Chops

I made this with shoulder chops instead of loin and I would definately recommend using the loin chops OR removing the meat from the bone beforehand (as another reviewer mentioned) Because I used shoulder chops, I marinated the meat overnight - was tender and delicous. This recipe is REALLY EASY.

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

omitted bacon, sauteed fresh spinach w onion first. Also browned chicken in olive oil before putting in oven for 20 mins at 325. blue cheese was a little overpowering. would make again.

Banana Muffins with a Crunch

Reduced the sugar by about a half cup and didn't miss it. Also made without granola and they turned out fine. Used three mashed bananas instead of slicing the third. Would add cinnamon.

Super Moist Pumpkin Bread

Made this for the people in my bldg xmas 05. Was good, but I expected it to be even better. Note: I omitted the nuts, and made into muffins instead of bread. Lowered temp to about 335-325 to make the muffins.

Fantastic Black Bean Chili

This tasted great! I turned up the heat a bit, adding a can of dices chiles and also mixed in a can of red chili beans. Ultimately, it didn't seem like you could go wrong with spicing up the basic recipie provided. Everyone loved it!

Laura's Lemon Roasted Potatoes

Made these as mashed potatoes using the following modifications: quartered, boiled and mashed potatoes. added ~2T of olive oil to water. in a small fry pan, combined ~2T butter, fresh lemon juice, garlic dill weed, salt pepper until simmering. Once potatoes were mashed, added the remaining ingredients in. also added milk to desired consistency. Delicious! served with sage pork chops (available on this site) and green beans.

Sage Pork Chops

Made this with modifications: omitted salt, but added lemon pepper and lemon zest. My chops were very thin and i think i over-cooked them, so they were a little tough. These came out VERY spicy, but that was probably because of the modifications I made. For the gravy, i took the chops out of the pan, added about 1/2 c of the beef broth, and then thickened up with flour. Would definitely do that again! would like to try again without lemon pepper and thicker chops. that being said, my 3 year old said they were "tasty" and ate a whole chop with no prompting! : )
