Chicken Marsala

As written it's good. However... I always use JUST a good marsala wine. Also, the flour mixture needs extra seasoning. A little onion powder, and paprika for color. I also add smashed garlic to the oil before adding mushrooms. And definitely double the mushrooms, you won't be disappointed.

Quinoa and Black Beans

I'm only giving this four stars "as-is". I do a similar recipe, with quinoa or barley, depending on what I have on hand, but always add green pepper, in place of corn, green onions as a garnish, and I ALWAYS use a splash of fresh lemon juice to get a nice fresh flavor at the end. Sometimes adding a little lemon zest also. This is a favorite, as I prepare it... without the lemon, this is a little bland for us.

Italian Bread Using a Bread Machine

Jeez, friggin' Louise, this is GOOD. Made exactly as written, just cooked on parchment paper with corn flour sprinkled, so I didn't have to transfer risen loaves. I took this out of the oven, having already sampled a bit... put some butter on it, brought it into my husband who was shoving an entire piece in his mouth already. This is tasty. Easy as pie, using the bread machine to do all the hard work for me. I wouldn't change a thing. One loaf is already gone, and dinner isn't even done cooking. Will be making again, maybe tomorrow. YUMMY!!!

Chocolate Zucchini Bread I

I would give this 10 stars if I could. I used about 1/4 cup cocoa with dry ingredients, in addition to the recipe as written, just cause I LOVE chocolate. This is to die for. I used my silicone loaf pan (on a baking sheet for stability), still greased and floured, because I always end up with 1/2 stuck in pan, no matter what I do. The silicone worked great, no sticking. This is more like a yummy moist brownie. Nobody needs to know that there is zucchini in it, you can't even tell. I still have a ton of zucchini left over, so this is gonna be made a gazillion more times. Thank you, Diane, for this amazing recipe!

Easy Meatloaf

I found the bread to meat ratio a little too high for our tastes, but overall one of my better meatloaf attempts. I also sauteed the onions with a half of a green pepper finely diced, for a little extra flavor.

Old Fashioned Onion Rings

Here's the deal. I wanted to make these tonight for Father's day BBQ. So, I get the flour mixture ready, Oil is heating, get my sheet pan ready with rack to drain... etc. I have NO onions. Seriously. First of all, this never happens in my kitchen. Second, I didn't want to waste ingredients or prep time already involved. I realized I had an entire pound of fresh button mushrooms. Wiped them clean, trimmed stems and quartered them. Followed recipe to a "T" except I knew that the onions themselves would've had a ton more flavor than the mushrooms, so I added 1t onion powder, 1/2t black pepper 1/4t cayenne and 1/2t of garlic powder to the flour mixture. Then just followed all the steps. The batter stuck perfectly. I've never fried mushrooms before, but husband, daughter and myself thought these were amazing! Can't wait to try with actual onions! Thank you for a wonderful method where the coating actually sticks to veggie involved!! Saved this and will use for other "experiments". Thanks, Jean Marie!!!!

Easy Sugar Cookies

Let me tell ya.... I have NEVER been a success at rolled sugar cookies. I actually cannot even make them to be edible. These ROCK! I followed the recipe exactly. Love them. Shame on you people who "substitute" ingredients, then give a two star review. These are great.

Dumplings

Followed exactly. Made 12 dumplings, I don't know how many this was supposed to make, but they took way longer than 15 minutes to cook. They taste good, but my texture was a little off. If I knew what size "spoonful" to drop these from, I may have had better results. Would add a little salt next time, and possibly some garlic or onion powder to jazz them up a bit. I'll stick to my "rolled" dumpling recipe from this site.

Penne with Spicy Vodka Tomato Cream Sauce

This is spot on to my recipe. I make this every year at a camping get-together with about 20 people. It's always a hit. I used to use pancetta, but found the sausage to be an easier taste addition. I do up the amount of vodka and cream, but it's awesome as written. Thanks!

Cheese and Bacon Potato Rounds

Yum, Yum, Yum. I did "fry" these in a pan with just a little butter, on both sides, just cause I didn't need the oven on so long for my main dish. I just popped them in the oven long enough to melt the cheese. A new favorite way to make potatoes in my house!

Lime Fish Tacos

Loved this. Added lime zest from lime to saute, served with a chipotle sour cream and garlic sauce instead of the one listed here. Also served with shredded cabbage, instead of lettuce. The fish cooked with garlic and lime was worth the 5 stars on its own. I used tilapia cubed. Yummy!!

Fish Tacos

This were good. I was hoping for spectacular. The sauce was great, but I think I would cut down on the dill, just a little. I made everything exactly as written, the fish was great, crispy and stayed that way, nice suprise. I think the corn tortillas are just too overpowering of a flavor on their own. I will probably not make these again, but may have to use the sauce recipe for other dishes, as I did think it was quite good (Oh, actually I did change one little thing, along with all other ingredients I added about a teaspoon of fresh grated lime zest to the sauce, I try to incorporate some whenever using the juice, I feel it makes it a little more "fresh" tasting). I tried the corn tortillas simply heated on a hot skillet, and I also tried frying them in oil, both ways did not appeal to me... I think I'm more of a flour tortilla kinda gal, they seem to allow the flavor of the filling to come through a little more.

Cranberry Orange Cookies

Holy cow, Holy cow, HOLY COW! Made these for a couokie exchange this weekend, they may not make it there! Good thing I have enough of everything to make another batch! I used just a splash of orange extract, because my oranges weren't very vibrant, but otherwise left everything the same, used fresh cranberries. Haven't even made the glaze yet, and half are gone! Used my food chopper (you know the slap chop thing) to chop the cranberries and it worked great. Loved these will be part of my rotation! Thanks for posting!

Fusion Chili

Making the chili sauce is the key! The last couple of times I made chili, I needed to keep adding chili powder to increase the chili flavor, sometimes making the final product grainy. This sauce had GREAT chili flavor without having to add a ton of chili powder. We loved this chili. I made it as written, except used a combination of four different dried chili peppers for the sauce, simply because I'm always buying them and rarely use all. I will use this as my new recipe! Thanks for posting!

Tin Roof Sundae Pie

I didn't taste this myself, but am rating it based upon remarks from guests. There was a funny, chewy texture to the crust that my friends found a little odd, they liked the flavor, however. I might try this again, but crush the cereal in a food processor first to more of a crumb-like consistancy. Followed recipe exactly.

Bodacious Broccoli Salad
