Smoky Grilled Pork Chops

Zuppa Di Pesce Fra Di Avolo

OMG. Just as good as our local restaurant. I halved the recipe, but kept the tomato sauce the same, to have enough to submerge all the seafood otherwise the mussels and clams kind of sat on top and didn't "simmer". Other than that, I wouldn't change a thing. My picky 15 year old daughter ate 3 helpings, then went back for more calamari. Delicious!!!

Restaurant-Style Coleslaw I

Pretty darned good. I, too, thought it was a little sweet but since we are using it mainly to top off some tangy pulled pork sandwiches it adds a nice flavour. If I were making this a strictly a side salad, I would cut back just a little on the sugar and perhaps add a little more vinegar. But this recipe DOES deliver as advertised.... tasted like popular restaurant coleslaw.

Homemade Arepas

This is pretty much the recipe from the cornmeal product container. Having said that... you can't really beat it. Sometimes, if only seving as a vessel for salsa, I 'll add some seasoning to the batter, but it is totally not necessary. Easy, fast and delish.

Amazingly Easy Irish Soda Bread

I made three different soda bread recipes this year. This is by far the best off the three. I used about 1/3C white sugar and would keep it that way. Next time I will also add raisins and caraway seeds to this base recipe for more of an "American" Irish soda bread. Yummy!!!!

Individual Baked Eggs

Awesome cooking method! When I go camping breakfast eggs take forever, for twelve people. This is my new caming breakfast recipe. I used ham slices for a little easier cup design. I love this!!!

Bill Wood's Juicy Pigs

Threw the whole works into the crockpot on high for six hours. Let it cool, strained the fat off, shredded the meat and put it back into the juices to reheat. Everyone agreed that this was fantastic!

Apple Cinnamon White Cake

Awesome! Would not hesitate to try different fillings. I found the "cake" part of this recipe absolutely, absurdly moist and delicious. Like a lighter, fluffier coffee cake. Thanks, this one is a true gem.

French Bread

I think the method is great, and produces a great loaf if you allow the yeast to proof first with the warm water and a teaspoon or two of sugar. I also add just a touch of olive oil or melted butter, seems to make dough more "workable" when rolling out. Make sure you have good yeast, and make sure to allow for full rising time, this is how you ensure you do not get a "dense" loaf of bread.

Moo Goo Gai Pan II

I follow this minus the chicken. I like it with just veggies. People keep commenting that this has no flavor, yet they leave out main ingredients. Bok choy is essential to the flavor of this dish, don't leave it out. I also add about a teaspoon of oyster sauce to the sauce mixture for more depth of Asian flavor. I also use sherry, instead of white wine. With my changes it's five star.

Beth's Spicy Oatmeal Raisin Cookies

I found this delicious but I thought it needed more spice, if you can believe that. My cookies came out a little thin, but not too bad. They are tasty (I added about 1/4 cup more raisins, just because we love them) but slightly bland. The sweetness is right on, but next time I will add more cinnamon.

Cake Mix Cookies VIII

Not a perfect cookie, but I thought it was pretty great in a pinch. I followed other advice and added about 1.5 T of canola oil and 1t of vanilla. I also only had jumbo eggs, so I added one whole egg and an extra yolk. I used a 1.5T scoop and these spread to about 3" round without being flattened at all, but I had to cook, rotating once in the oven for 14 min to cook fully. I used "Betty C" triple chocolate mix.

Chef John's Classic Beef Stroganoff

The only thing I would suggest to do differently, is to brown the meat in batches. Yes, it's a little more time consuming, but unless you have a really, REAaaaaaaaaaaaaaaally Large skillet, this step as written takes forever to brown, and basically at that point you are steaming your meat, not searing it to get optimum flavor. Other than that, spot on recipe, very good.

Caramel Apple Roll-Ups

YUM! I don't usually have caramel topping, so I just leave it out and these are still great. Might try adding a little sweetened condensed milk in place of caramel, haven't decided if it needs it or not. I also dice the apples and cook them a little in a saute pan prior to adding to cream cheese filling.

Real Hummus

Good base to start. The only thing I would suggest is to totally leave out the salt, it just isn't necessary with the lemon juice. I follow the rest of the recipe, including the author's suggestion of adding cumin (which I almost double), and I add 1/2 a fresh jalepeno. Love it. Thanks.

Red Enchilada Sauce

Made as written. Tasted like spaghetti sauce with the oregano and basil. Made it again, doubled onions, added more cumin, chili powder and used tomato paste in place of tomato sauce. Also used chicken broth (homemade) the second time in place of water. This still tasted much like an Italian sauce to me, so I think I'll keep searching. Okay, this time I added about 2T of cilantro and some "Spanish Paprika". It did seem to help, ALOT. So I guess as a base recipe this is OK, but I did change it tons to be more my style.
