Sam's Famous Carrot Cake

I couldn't find my most cherished carrot cake recipe and tried this one to rave reviews from my coworkers. I handed the recipe out to several very grateful friends. Thank you for the submission!

Aussie Chicken

Robust flavor! Recipe it took a couple of pans to prepare, which is kind of a downside for me, as my sweetie and I weren't wild about this recipe. The recipe is very good; I think we may not have cared for it as much as others as we may lean towards simpler tastes. I loved the sauce though and would definitely use it on its own.

Potato Leek Soup III

I actually made this soup last fall and am now just getting 'round to reviewing it as I'm looking over my cold-weather recipes. I'm usually not particularly good at soup-making, but this wonderful soup has raised my reputation to new heights! It is lovely! I pureed the soup in a blender and reheated for a smoother texture, but otherwise pretty much followed the recipe. Thanks to the submitter. I shall be making this again and again and basking in the compliments!

French Onion Soup I

Oh boy, am I ever in love with this onion soup! I'm generally not a big fan of onion soup, but my boyfriend is, so after reading the other recipes, I tried this one, and we are so glad I did! I did make a couple of changes though. I added a LOT more onions and gently browned them until they were very golden. All in all, that took about an hour, but the enhanced onion flavor is well worth the effort. I only used beef broth, no water, and to up the beef flavor even more, I used a couple of teaspoons of a product called Better Than Boullion. Finally, because I don't like the flavor of red wine in soup, I swapped it out for a slash of cognac, but be careful as the cognac can too easily overpower everything else. Swiss cheese is the absolute best choice here. We love this soup so much that we can't even considering ordering it when we're out. We just know it won't be as good!

Ultimate Twice Baked Potatoes

Let me add my voice to the chorus of those who sing the praises of this wonderful recipe! Excellent! Divine! Wonderful! Oh my goodness! Need I say more? Depending on the type of potato I had on hand, I used more or less milk and butter to get the right consistency, but other than that, followed the recipe as written.

Very good recipe. I have another recipe I really love, but I would encourage any novice cheesecake baker or one who may be short on time (as I was when I made this) to try this recipe for happy results.

Overnight Cinnamon Rolls I

Hamburger Buns

These are so delicious and easy to make I cannot justifying buying hamburger buns again! My hamburgers tasted extra special. For an added kick, I've mixed in some light golden onions to the batter and dried onions and garlic to the top. I think I am in heaven! Thank you!

Baked Apricot Chicken

This recipe brings back fond, delicious memories of when I was first learning how to cook many moons ago! It's great to see it again. Food doesn't have to be complicated to be delicious! I've also made this with Russian dressing, with very tasty results.

Blackberry and Blueberry Pie

My, oh my, I do love pie, and I especially enjoyed this one! I used 2 pkgs of frozen mixed berries, swapped out an equal amount of cornstarch for the flour as cornstarch has more thickening power, added a couple of grates of nutmeg across my nutmeg grater. Used an eggwash on the crush sprinkled with sugar. This is now one of my signature summer pies.

Durbin Hotel Sugar Cream Pie

Never heard of a sugar cream pie until my 90-something neighbor cheerfully reminisced about her younger days and she happened to mention her misadventure with a sugar cream pie that ended up in the Connecticut River! Fortunately, this recipe was more successful and I enjoy this humble pie in her honor.

New England Clam Chowder II

Delicious and comforting, especially on the days when winter swirls about us here. I don't care for the flavor of canned clams as I feel I can taste the tinniness, but we are fortunate enough to be able to buy them freshly frozen, and that to me makes the difference. I live in the hills now, but with a steamy slice of corn bread slathered with honey butter and a ton of clams just winking at me, I'm young again and back on the Cape Cod dunes in the wintertime!

Deb's Scallops Florentine

I really like all the ingredients listed in the recipe, and after reading all the rave reviews, I was so looking forward to trying this recipe. My sweetie really loves both scallops and spinach and I had high hopes this would make a special dinner. However, for us,it was a disappointment. It is not a flavor combination that worked well as we felt it was bland and the texture unappealing. It was worth a try though and based on other reviews, I wouldn't discourage anyone.

Amish Casserole

The first time I made this recipe, I thought it was okay but not one that I would make again. However, it was one that seemed so promising, I decided to tinker with it to make it "mine." First of all, I added a can of diced tomatoes, drained, with diced green peppers and onions, and some grated carrot to the tomato soup and cooked it all with the hamburg. (This will make a lot, so I use the extra to make Spanish rice later on in the week....) I don't care for sliced American cheese particularly, so I used shredded cheddar. I think there is way too much sugar, so I cut that back to a couple of teaspoons (the carrot is a natural sweetner, anyway, so less sugar can be used). When I mixed the cream of chicken soup with the noddles, I also added additional shredded cheddar cheese and sour cream. Voila! We love, love, love this recipe, and it gets served frequently. Wonderful comfort food! Great reheated, too.

Amish Meatloaf

This is the absolute best! I never made a really great meatloaf until I made this one. I do make one change, though. I don't add the ketchup and brown sugar called for in the meat mixture. Instead, I add about an 1/8 cup of fresh parsley and use a 1/2 cup or so from the basting sauce. There is no other meatloaf recipe in my estimation!
